SANTA FE MEXICAN SOUP
2 lbs chicken breast
14 oz can Mild Rotel
15 oz can black beans
15 oz. can of corn
2 cups can fat free chicken broth
1 small onion chopped
1 garlic clove, minced
2 tsp southwest ranch dressing mix
1 tsp cayenne pepper (or to taste)
Add all ingredients except chicken to crockpot and mix together. Add chicken breast on top. Salt and pepper to taste. Cook until tender.
This soup is very tastey on it's own. You can also embellish with cheese, sour cream and tortilla strips. Of course, if you are looking for a light dish.........don't embellish it!!!! ;)

ReplyDeleteHello Farmchick!
ReplyDeleteWell what a wonderful blog you have...I'm having fun looking around! Thanks for stopping by to say HI this morning...it was nice 'meeting' you. Seeing your farm I see you're a REAL farm girl with big GREEN tractors and all! I'm not sure if I should even be here since we only have a little 5 acre farm...we have a tractor but it's not even GREEN... hanging my head in shame ;) I loved hearing the song 'She's Country'...I even heard Kansas mentioned. We're surrounded by fields of grain so I guess that makes me a country girl/farm chick too. I'm going back to look around some more....I hope you have a wonderful day!
Maura :)
Thanks for your visit...this looks so good and will be perfect for tonight...we are getting wild wind and snow! ;D

This sounds like something I would like. It reminds me of the taco soup except for the dressing mix.
