Weight Watcher Wednesday ~ Slow Cooker Veggies in Cheese Sauce


This side dish is so easy to throw together. You cook it in your slow cooker so it saves time and room in the oven!!

Slow Cooker Veggies in Cheese Sauce

1 - 32 ounce California Blend Veggies - thawed
4 ounces reduced fat Velveeta Cheese - cubed
1/2 cup 2% cheddar cheese - shredded
1 -10-1/4 ounces reduced fat cream of chicken soup
1/4 cup skim milk
salt and pepper to taste
Put the veggies in your slow cooker. In a 2 cup glass measuring cup combine your soup, milk and cheese. Melt on medium in the microwave. When melted give it a good stir and then pour it over your veggies. Add salt and pepper. Cover and cook on low for 3-4 hours. Stir before serving.
Give it try.......I hope you love it!!

  1. What a great looking recipe! Love that it can all be thrown in to a slow cooker! It's raining here in northern CA and I'll be using my slow cooker tomorrow for a roast, but I'll try your veggie dish the next time:) thanks!

  6. I grew up eating this dish. Yum! Sometimes I will make it and add some leftover grilled chicken at the end. I could eat it for lunch for days and days!
