First off, I must tell you before I forget..........I thought that I had fettuccine in my pantry.....I was wrong. So, I had to use spaghetti. I think you will still get the picture!! :)
We are digging ourselves out after a spring blizzard here yesterday. We only got 10 inches of snow....much better than the predicted 16 inches!!
12 ounces uncooked fetticcine or other pasta ;)
1 teaspoon salt
1/8 teaspoon red pepper flakes
2 tablespoons butter
4 garlic cloves, pressed
3 cups fat-free half and half
1/2 cup Parmesan cheese
Cook the pasta according to directions. Meanwhile melt the butter and then add the flour. Cook on medium stiring constantly. Cook for several minutes to give the flour a more browned nutty taste. Add garlic. Gradually add the 1/2 and 1/2 . Bring to boil. Cook and stir for 1 - 2 minutes or until thickened. Add parmesan, salt and pepper flakes. Drain pasta. Toss the sauce with the pasta and serve!
I like to add a little more pepper flakes and grind some pepper on my serving! Enjoy!!

This is one of my favorite meals..YUM! Can it be that it is low in cal/fat with 3 cups of half&half? I guess it is when compared to the real thing...YUM! ;D
