Hearty Cheese Ravioli Casserole

Greetings from the frozen tundra!! It is supposed to be -55 windchills tomorrow morning. Yes folks...you read that right...55 below zero windchills here in my neck of the woods. In celebration {haha} of the extremely cold temps I decided to make a warm, cheesy, hearty supper.

HEARTY CHEESE RAVIOLI CASSEROLE
1/2 pound bulk Italian sausage
1/2 pound lean ground beef (90% lean)
1 jar (24 ounces) marinara sauce
1 can (14-1/2 ounces) Italian diced tomatoes
1 cup sliced fresh mushrooms
1 package (25 ounces) cheese raviolo
1 cup (4 ounces) shredded part-skim mozzarella cheese
Directions
In a small skillet, cook sausage and beef over medium heat until no longer pink; drain. Transfer to a casserole dish. Stir in the marinara sauce, tomatoes and mushrooms. Prepare the ravioli according to package directions; stir into meat mixture. Sprinkle with cheese. Cover and cook for 15 minutes or until cheese is browning and bubbly.

Now......who want's a bowl?

I am wondering.....how many of you are watching your weight or dieting? Awhile back I used to do a Weight Watchers Wednesday. On Wednesday I would post a healthy dish and list the Weight Watchers Points too. You don't have to actually be on Weight Watcher to enjoy these meals. I am using the words Weight Watcher...as in someone who is watching their weight...not the actual diet!! Is there anybody out there that would like me to bring Weight Watcher Wednesday back to my blog?? I would love to know....and I may start doing it again.

Stay warm everyone....I know I intend to!

  6. If I am going to try that recipe, and I think I may, I would really appreciate a WW recipe or two once in awhile. It surely can't hurt to be 'good' every now and again!

    Thanks for the offer...
