Mini Mexican Pizza
If you want a quick meal packed with a lot of protein and spice....my Mini Mexican Pizza is just for you! A baked corn tortilla piled high with seasoned lean ground beef, homemade pico de gallo and avocados, black olives, cheese and any other topping that you prefer.

Mini Mexican Pizza
Ingredients:
Corn Tortillas
Ground Beef
Refried Beans
Pico de Gallo
Avocado
Cheese

1. Put corn tortillas on a baking sheet and bake at 400 degrees until lightly toasted and crisp.
2. Brown ground beef. I like to really brown mine--the key is browning and seasoning it properly.. I use a mixture of sea salt, cracked pepper, chile powder, cumin and red pepper flakes.
3. Spread refried beans on tortillas, then add ground beef and cheese. Throw them back into the oven until the cheese is melted and slightly browned.
4. Add your toppings such as avocade, olives and pico de gallo. You could also add sour cream and lettuce....anything that tickles your fancy!!
