Make your own convenient frozen food! :)


Hi everyone~


Hoping this post finds you all happy and healthy! :) It is a beautiful day here...in the 30's...a much loved temp after the -35 degree temps we had last week.


The other day we went to Sam's Club to do a little shopping. As I walked up and down the isles I noticed many people throwing boxed foods into their cart. I also noticed that the frozen food section seemed to be a very popular place to be. I saw that frozen burritos, enchiladas and lasagna were piled into many carts. This started me thinking.....maybe people just do not realize how easy it is to make your own homemade food and freeze it in single serving packages just like you find in your local grocery store!

Today I decided to show you how to do this. I hope you will try this yourself!



BEEF and BEAN ENCHLADAS
or BEEF and BEAN BURRITOS

2 pounds extra lean ground beef
1 - 16 oz. can fat free refried beans
1 - 10 oz can enchilada sauce
shredded mexi blend cheese (your desired amount)
olives - sliced
1 onion diced
1 small can diced green chilies peppers
salt and pepper to taste
taco seasoning or burrito seasoning
Brown the hamburger and add onion.
Cook until no longer pink and onion is cooked.
Add seasoning and 1/2 cup of water.
Add 1/4 cup enchilada sauce.
Bring to a boil and then add refried beans.
Let cook on low heat for 15 minutes.
Heat tortilla shells.
Put a heaping 1/4 cup of filling
on the shell. Roll up.
If you want BURRITOS then
place the rolled burritos into a
ziplock bag and freeze.

When you are ready to eat-
simply take the frozen burrito
out of the freezer, open the bag
a bit and heat in microwave until
hot and heated through.

For ENCHILADAS
Place the filled tortillas
on a cookie sheet. Pour
enchilada sauce over each
tortilla, sprinkle cheese and
olives on each one. Now
just stick this pan into the
freezer to flash freeze. When
they are frozen package
each one individually in ziplocks.

To heat--open ziplock a bit
and heat in microwave until
hot and heated through.

I just store all of the individually
wrapped burritos or enchiladas
in a ziplock bag. The kids can
now take one out and heat
it for a simple and healthy
meal or snack.

Now wasn't that simple?
I know it does take some time
but I feel it is worth your time
and effort. Your homemade
enchiladas or burritos will
taste sooo much better than
store bought and also they are
soooo much better for you without
all the preservitives. I hope you take
an afternoon and give this a try!

  3. I can't believe the money spent on the prepared foods these days. I too admit, if I worked a 40 hour week and had to commute and then come home and deal with allthe chores, I'd probaboy be tempted too, but we know that a lot of stay at home moms buy that stuff too. I agree -it's so easy to make ahead and freeze! Your ideas are great ones!!

  4. Great idea! We freeze a lot of food. I figure it's just as easy to make a double batch of something as it is to make a single batch. I freeze spaghetti sauce, chili, meatballs, grilled chicken, burgers, casseroles, soups. I love it when I have something in the freezer on the days I don't feel like cooking. Come to think of it, so does my family! ;-)

    Now...how do you use to wrap your food to keep things from getting freezer burn?

  5. THAT IS GOOD IDEA...I CAN'T BELIEVE THE FOOD PEOPLE EAT NOWADAYS..NOTHING IS REAL FOOD! IF THEY'D ONLY TAKE A BIT OF TIME TO DISCOVER WHAT REAL FOOD TASTES LIKE THEY WOULDN'T BUY THAT JUNK IN THE FREEZER SECTION ANY MORE! COME SAY HI :D

  6. Beth~I usually use press n seal and then stick things in freezer bags or else I use the food saver...it just depends on it is! :)

    I like to have food made up and in the freezer for a quick meal.
    I could also have a quick lunch.
    We are in the 30s today and I didn't think that would sound warm.

  9. What a great idea! We did *pizza pockets* last fall.... you can buy the frozen dough already cut in squares for like eggrolls. We just added the ingredients we wanted and cooked them froze them. Kids loved it. Easy snack for after school.

  10. Sometimes I admit to throwing something frozen in the oven. But most times, it's made from scratch. Taste a whole lot better!

  15. Ya got this farm chick foamin' at the mouth like some rabid dog. Will somebody hand me a hankie??? Boy, those look yummy! The freezing thing, 'excellent' ideal. I started freezing entrees years ago when I was teaching. I could then pull out my main dish out of the freezer, toss a salad and bake a potato and waa~laa, soups on! Woohoo!!!

  16. I need to do this more. With four teenage boys and three little girls, we go through enormous amounts of food. I am guilty of buying those pre-packaged foods at costco.

  19. Tania, you are so right! When I was working outside the home, I often did all of my cooking on Saturday and froze individual meals for the three of us. It would have been much harder if there were more in my family at that time. But for 3, it was pretty simple. I would thaw them mout in the fidge the day of, and heat them in the microwave when we were all home for dinner. Now that I'm home nearly every afternoon, I enjoy cooking most every night. Its the clean up that I don't like! LOL!

  20. Carolyn~ I too like to cook everyday and yes I hate the cleanup too!! haha I mostly use these enchiladas for after school snacks for the kids...they enjoy popping them in the microwave and eating them! :)
