RECIPE:Chocolate Chip Banana Bundt Cake....Finally!



CHOCOLATE CHIP BANANA BUNDT CAKE


Ingredients:
1/3 cup shortening
1-1/4 cups sugar
2 eggs
1 teaspoon vanilla extract
1-1/4 cups mashed ripe bananas (about 3 medium)
2 cups all-purpose flour
1-1/4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (8 ounces) sour cream
3/4 cup chopped walnuts (I didn't have any so use only if you want!)
1 bag of Chocolate Chips--milk choc or semi sweet--your choice!


In a large bowl, cream the shortening and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Add bananas and mix well. Combine the flour, baking powder, baking soda and salt; add to the creamed mixture alternately with sour cream, stirring just until combined. Stir in walnuts. Pour about 1/3 of batter into a greased and floured 10-in. fluted tube pan, sprinkle with chips and repeat ending with batter on the top! You can put as many chips as you want--I used the whole bag! :) Bake at 350° for 50-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.


That's it! :) It is pretty simple and I have not yet had a problem getting it out of the pan! Of course, I don't think I have taken this cake anywhere outside of our home. Isn't that usually when bundt cake sticks to the side of the pan??? When you are taking it to someone elses house or maybe a church function???!!!


It has been raining a nice soft rain here on and off for three days. It is a great rain for our crops that already have been planted. It doesn't plaster them into the ground. We still need to finish our seeding so we would like the sun to come out and dry out our fields so we can do that! I still have more flowers and a few things to plant in my garden so I am getting anxious.


I am hoping to come back in a day or two so that I can post a recipe or two that would be great for Father's Day! Of course, the bundt cake would be perfect for any Dad out there! Thanks for stopping by - have a great week!
