Beef & Bean Burritos---AS PROMISED! :)

Well, here I am ......just like I said I would be. Some of you didn't think I would show up today did you! Hmmm....???????

These Beef and Bean Burritos are easy to make and quite yummy too!

1 pound lean ground beef

tablespoon chili powder

1/2 cup water

1 teaspoon salt

1 cup diced onion

1/2 teaspoon paprika

1/2 teaspoon onion powder

1 clove Crushed garlic

1/2 cup water

1 16-ounce can refried beans

8 10-inch flour tortillas

1 cup enchilada sauce

3/4 cup sour cream

2 cups shredded lettuce

2 cups shredded cheddar cheese

1 medium tomato diced

1/2 cup sliced green onions

black olives

In medium bowl, combine ground beef with flour, chili powder, salt, onion, paprika, onion powder and pressed garlic . Mix all together. Add seasoned beef mixture to water in a skillet over medium heat. Mix well, and break up meat as it cooks.Heat for 5 to 6 minutes or until browned. The finished product should be very smooth, you do not want large chunks of beef. Now heat up the refried beans in covered container in microwave for 1 1/2 to 2 minutes. Place flour tortillas on microwave-safe plate and heat for 25 to 35 seconds. Spread about ¼ cup of refried beans on center of heated tortilla and then spread 1/8 of the meat mixture over beans, now pour about a tablespoon of the enchilada sauce over meat. Stir sour cream, then spread about 1 1/2 tablespoons onto burrito. Arrange some of the lettuce, cheese, tomato and onion onto the tortilla. Fold flaps over and place in a greased baking dish. Pour remaining enchilada sauce over the burritos then sprinkle cheese, green onions and olives. Cover with tinfoil and heat until heated through and cheese is melted. DO NOT let them dry out! Also, you can just roll up the burritos and serve without heating in a baking dish. Both ways are very good! I hope you enjoy!!! Please leave me a comment so that I can visit you too!

I am hoping to be back on my regular blogging schedule and hope to be able to visit each and everyone of you again! Have a great evening!

  1. Sounds very similar to the ones we make here! We also make something called a "wet burrito", that has a kind of tomatoey/beefy gravy over the top. Yummo. My kids make sure they're home for wet burrito night!

  15. Wishing you a Happy (belated) Birthday! Thanks for visiting my blog and the kind healing words while I was in the hospital. Coming back slowly, but fighting to get better everyday. As long as the wireless holds up, I guess I'm good to go. :) You've been very busy and I enjoyed catching up with your posts. Wow! That was a LOT of mud after the snow melted. I'm such a big kid that I would have had to slide in it like they did during Woodstock. :) Glad to be back. xxoo
