Weight Watcher Wednesday ~ Sausage & Cheese Egg Muffin


This Egg Muffin is so quick, easy and packed with protein. It literally just takes a few minutes to whip up and cook. This recipe is for one muffin....just multiply for the amount needed! Here it goes...I hope you enjoy it!!
Sausage and Cheese Egg Muffins

1 egg
1 tablespoon milk
1 teaspoon onions, green peppers, red peppers etc...whatever veggie you like
1 tablespoon 2 % cheddar cheese, shredded
2 tablespoons cooked Italian sausage crumbles

Beat together until frothy. Pour into a greased microwave safe small dish like a ramekin. Cook for 1:30 seconds...check egg....if it is still wet and uncooked just pop it back into the microwave until cooked. Be careful not to cook it too long! Invert onto a plate. I added salsa to mine. EAT!!!
