COFFEE CAKE
1/2 cup butter, softened
1 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
2 eggs, beaten
1 cup sour cream
1 1/2 cups all purpose flour
1 teaspoon baking soda
Topping, divided
Cream the butter and sugar. Add eggs and mix well. Add sour cream, flour and baking soda. Pour half of the batter into a greased 13"x9" baking pan (I used a Bundt pan) and then sprinkle with half of the topping. Pour other half of batter into pan and top with the remaining topping. Bake at 325 degrees for 30 minutes.
TOPPING:
3/4 cup sugar
1/2 cup chopped nuts {I used pecans}
2 teaaspoons cinnamon
Mix together in small bowl

ReplyDeleteHope that you are able to get into the fields soon. Here it has been super dry. The driest August since 1892! Corn is ahead of schedule here and is ready to harvest. Beans that were not planted really early might not make it. Makes me sad to see all of those fields that might not make it.
