I L*O*V*E these chocolate chip cookies...they are a perfect combo of soft, crisp, chocolatey and sweet! I have seen recipes like this around the web but this one I found in my recipe file...it is one I had torn out of a magazine some time ago. I am glad I found it! What is different about these cookies you ask...well, this recipe does not call for baking powder but it does use cornstarch. That is the secret to these gems. I hope you love 'em too.
Farmchick's Favorite Chocolate Chip Cookie
3/4 cup {1 1/2 sticks} softened butter
3/4 cup brown sugar
1/4 cup granulated sugar
1 egg
2 teaspoons vanilla extract
1 1/2 cups all purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
2 cups bittersweet chocolate chips *~*. ~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~ Preheat oven to 350F Line baking sheets with parchment paper. Place flour, cornstarch, baking soda and salt in a medium bowl and whisk to combine. In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until fluffy. Add the egg and vanilla to mixture and blend. Add flour mixture on low speed. Stir in chocolate chips. Using a cookie scoop drop dough onto prepared baking sheets; slightly flatten the dough balls. Bake for 8-10 minutes, until golden brown around the edges. DO NOT over bake these cookies. Remove from oven and let cool on pan for a few minutes and then transfer to wire racks.*If you over bake these cookies will be quite hard...remember to bake just until edges are golden....even if the middle looks uncooked...take them out!*
