Healthy Recipe - Cowboy Caviar

 
Cowboy Caviar.....perfect for a healthy snack with homemade corn chips.  I love it on a grilled chicken breast or steak too!

Cowboy Caviar
Ingredients:
  • 2-15 Ounce - Black beans, drained and rinsed.
  • 1-17 Ounce - Corn, drained and rinsed
  • 1 15 Ounce - Petite diced tomatoes
  • 2 - Avocado, diced
  • 1/2 Cup - Green onion, chopped
  • 1/4 Cup - Fresh cilantro
  • 1 Tablespoon - Red wine vinegar
  • 4 Tablespoons - Fresh lime juice
  • 2 Tablespoons - Olive oil
  • 1 Teaspoons - Salt
  • 1/2 Teaspoon - Black Pepper

Combine all ingredients and chill for at least 3 hours to get optimum flavor!!

  7. I make something really similar! Only, I use 2 cans of Mexicorn, balsamic vinegar instead of red wine, and add a packet of Italian dressing seasoning instead of salt and pepper and its to die for! Totally recommend it ;)
