Cowboy Caviar
Ingredients:- 2-15 Ounce - Black beans, drained and rinsed.
- 1-17 Ounce - Corn, drained and rinsed
- 1 15 Ounce - Petite diced tomatoes
- 2 - Avocado, diced
- 1/2 Cup - Green onion, chopped
- 1/4 Cup - Fresh cilantro
- 1 Tablespoon - Red wine vinegar
- 4 Tablespoons - Fresh lime juice
- 2 Tablespoons - Olive oil
- 1 Teaspoons - Salt
- 1/2 Teaspoon - Black Pepper

Love this recipe, we actually feed it to the kids at the middle school and they eat it up!!

ReplyDeleteI make something really similar! Only, I use 2 cans of Mexicorn, balsamic vinegar instead of red wine, and add a packet of Italian dressing seasoning instead of salt and pepper and its to die for! Totally recommend it ;)
