Gluten Free Sugar Cookie Bars

If you are looking for a gluten free bar recipe that tastes good...so good that you won't even miss the gluten...then look no farther my friends. These GLUTEN FREE Sugar Cookie Bars are moist and not grainy...you will love them...and your gluten free friends will LOVE you for making them!! They are quick and easy to make...you can dress them up to look festive...everyone will love them...what more could you ask for!?!

 

I have been making the gluten version of these bars for years....and you can find many recipes around the web.  Click here to see my post on them from a few years ago. 

Gluten Free Sugar Cookie Bars

1 cup butter room temperature
2 cups sugar
4 large eggs
2 teaspoons vanilla extract
1/2 teaspoon almond extract
5 cups Gluten Free flour mix...I used Better Batter
1 teaspoon salt
½ teaspoon baking  soda

Frosting:

1/2 cup butter room temperature
1- 8 oz. block cream cheese room temperature
1 1/2 teaspoons vanilla extract
1/2 teaspoon almond extract
1/4 teaspoon salt
4 cups powdered sugar
4 tablespoons whipping cream - may need more
Food coloring
Sprinkles!!!

{add a thick layer of frosting and sprinkles too}
 
Directions: Cookie Bars: Preheat oven to 350ยบ F. Line a jelly roll pan with parchment paper. In a bowl, cream together the butter and sugar on medium-high speed until fluffy. Beat the eggs into the mixture - adding one at a time. Add both extracts and mix thoroughly. In another bowl whisk together the flour, salt, and baking soda. Add flour mixture, slowly to the butter and sugar mixture and beat until just combined. Press the dough into an even layer in your lined pan. Bake for 12-16 minutes. The bars should be golden brown on the edges. Remove from oven and let cool.

{I didn't get to share these this fall when I had intended too...
so if you make them now..of course use Christmas colored sprinkles!!! }

Frosting: Place butter into the bowl and cream cheese in bowl and beat on medium high until there are no lumps. Add vanilla extract, almond extract, salt and powdered sugar. Beat until combined. Add cream 1 tablespoon at a time and beat until fluffy and smooth.Add cream until you obtain your desired consistency.  Add food coloring. Frost and add sprinkles (because...you know..they are fun! ;)

  1. HI! Just hopped over from Cow Pies and Mud Pies - I'm going to have to try this recipe - I have recently gone gluten free and with three small kids (one of which has to be gluten free too) I'm looking for ways to include traditional foods that are GF. This looks good!
