It's time to get cookin'!

It's time to get out your cooking gear and get to work on a really

SIMPLE yet DELICIOUS

MEAL!!

CHICKEN SCAMPI SCALOPPINE


1/4 cup butter

1/4 cup olive oil

1/4 c. green onions, finely sliced

3 cloves minced garlic

juice of 1/2 lemon

4 bonesless, skinless chicken breasts

1/2 tsp course ground pepper


salt - use your judgement

1/4 cup minced parlsey

1 tomato, chopped
♥ ♥ ♥ ♥ ♥ ♥


Between waxed paper, pound the chicken until flat and approximately doubled in size. In a pan, heat together butter and olive oil, ( I cut down the amount of butter used) saute green onions and garlic. Add lemon juice, chicken,k salt, pepper and parsley. Continue cooking, stirring constantly, for 5-8 minutes, turning chicken once until chicken is cooked through and juices run clear. Add tomatoes and heat through.


Serve with a side of rice and a bunch of broccoi and you have one great meal! Hope you enjoy it!

  18. MMMMM looks good...ive got sauerbraten and german red cabbage cooking...realized im out of flour so i cant make homemade spaetzle :-( so noodles it is. Everyones post and the smell of my dinner is making ME HUNGRY! :-)
