Here I am!

Hi everyone. I just wanted to pop in and tell you all that I have NOT forgotten you! I miss visiting you all! Well, I am here to say that come Monday things here should have settled down and I will be back to my normal posting schedule. I hope everyone has a wonderful weekend and I will be back on Monday to post a recipe for these wonderful and simple enchiladas!
I will soon be able to stop in and visit so I can find out what everyone has been up too! I sure do hope you will stop back on Monday to catch my yummy recipe!

    Ooh, your enchiladas look delicious! I'll be sure to give your recipe to Jack, so he can make them for us. If I tried to make them, trust me, they wouldn't turn out like yours! Thank heavens for my wonderful hubby chef!

    OHHH, I am soooo ready for this recipe. I miss my Tex-Mex food since the move to Georgia. I do tacos and a enchilada casserole, but have been craving enchiladas and tortillas :-)
