Whew...........things have been so busy here on the farm. We have had a few days of no rain and let me tell you there has been a flurry of activity around here. The most important being that the tractors are rolling so we are getting some crops planted! I did some speed gardening and got my garden and the majority of my flowers planted.
I have been baking a lot of things to take out to the field for meals. Last night I made these Rhubarb Crisp Muffins. Very yummy!! :) I love the tartness of rhubarb mixed in with sweetness.....just tastes sooooooooooooo good.
Rhubarb Crisp Muffins
2 1/2 C flour
1 tsp baking soda
1 tsp salt
1 1/2 C packed brown sugar
2/3 C Canola Oil
1 C sour cream
1 egg
1 tsp vanilla
1 1/2 C chopped rhubarb

Topping
1/4 cup butter {softened}
1 C Quick oats
1/2 cup brown sugar
Preheat oven to 325 degrees. Put cupcake liners in muffin tins. In a bowl, mix the flour, baking soda and salt. In a separate bowl combine 1 1/2 cups packed brown sugar, canola oil, sourcream, egg and vanilla. Comine. Stir the flour mixture into the batter and fold in the chopped rhubarb. Fill muffin cups about 3/4 full.
In another bowl mix the butter, oatmeal and 1/2 cup butter for the topping of the muffins. Sprinkle on muffins and bake!!

those sure do look yummy and I love rhubarb. I remember when my grandma would make a rhubarb crisp and then she would put real cream on it.

ReplyDeleteMy mom makes a rhubarb crumble with raspberries in it! It is to die for! The rhubarb in our garden is already coming along awesome and we have been able to make deserts with it for a few weeks now! I copied this recipe and can't wait to try it!
