Patriotic treat and the flooding here.

The 4th of July is almost here. I LOVE the 4th but I am not quite ready for it to be here. I don't want our summer to be going so quickly.....but it is.

As many of you know we have a horrendous flood here in my wonderful state. There is such sadness as thousands of people will lose their homes. We watch the live coverage around the clock and I have cried many times as I see friend and strangers homes with water up to the roofs and there are even some people that the flood water has actually covered the roof and their homes are no longer visible. We have all banded together to help each other get through this. Neighbor helping neighbor, friend helping friend and stranger helping stranger. I am so proud to be a NORTH DAKOTAN!!! Please keep the people of my state in your prayers.

So.............on a lighter note I am posting this recipe {for a second time} to try to do something cheerful and upbeat! PATRIOTIC FROZEN DELIGHT is a delightfully easy dessert to make and it just looks so happy and of course.....patriotic!! :) I have some other patriotic ideas I want to share with you but I will start off with this one.


Patriotic Frozen Delight

1 can (14 ounces) sweetened condensed milk
1/3 cup lemon juice
2 cups (16 ounces) plain yogurt
2 cups miniature marshmallows
1/2 cup chopped pecans
1 cup sliced fresh strawberries
1 cup fresh blueberries

In a bowl, combine milk, lemon juice. Stir in yogurt, marshmallows and pecans. Spread half into an ungreased 11-in. x 7-in. dish. Sprinkle with half of the strawberries and blueberries. Cover with the remaining yogurt mixture; top with remaining berries. Cover and freeze. Remove from the freezer 15-20 minutes before serving.

  3. Ive been watching the news.. sooo sad. Everytime I feel like complaining about the weather here, I stop and bite my tongue. ifeel so bad for anyone losing their home and belongings. I will pray!
