Another random photo...my way of showing you all things that I didn't get the chance to post! Go HERE to read my first post on random photos.

I took this summer near a slough on our land. Wow....seeing the deep green, blues and pinks REALLY makes me want spring to come.

How about you...anyone getting spring fever??

Oreo Cupcakes...for your sweethearts.

This cupcake is sure to win over your sweetheart. From the crunchy cookie bottom, moist cake and the rich oreo frosting....you just cannot go wrong! Put this recipe on your MUST try list. :) {Just don't count the calories}

Preheat oven to 350. Mix packaged cake mix according to directions but do not bake yet. Line your cupcake tins with liners and place a regular size oreo cookie in the bottom of each one. {yum}.

Coarsely chop half of the remaining cookies and add to cake mix.

Fill the cupcake tins. Bake for 15 min or until done. While cupcakes are baking make the frosting.

FROSTING

Cream together butter and cream cheese. Add vanilla, then add powdered sugar slowly until blended well. Chop remaining regular-sized Oreos very fine. Add to frosting. When cupcakes are cool frost and decorate with a few mini oreos on top. {mini oreos optional}

1 package oreos ~ regular size

1 package mini oreos {for decoration}

1 package chocolate cake mix~ follow directions on the box

8 oz cream cheese at room temperature

8 Tbsp butter at room temperature

3 3/4 cup powdered sugar

1 tsp vanilla extract

cupcake liners

It's FRIDAY!!! So, you know what that means....FARM PHOTO FRIDAY!!

I had intended to post a recipe yesterday but as I started baking I found that I was missing one ingredient for the frosting. I was POSITIVE I had this ingredient but I searched every refrigerator in our house and just could not find it. Since we live on the farm I didn't want to just run into town.....so I will be posting my recipe tomorrow!! :)

It has come to my attention that I have thousands....literally thousands of pictures that I have taken that were supposed to end up on my blog at some point in time. Due to just being one busy Mom and wife I have failed to post as often as intended. So, now I have a computer full of pictures of our kids, our family, our farm, fields, my garden, our cattle, recipes I have made.....you name it! Of course, I am glad I have all these photos for myself but I would still like to share many of them with you. I am going to just start randomly posting pictures on my blog....they may be out of season....they may be from 6 months ago or they may be from 2 days ago. I just feel the need to SHARE them.

Today I am sharing a photo I took this summer when we traveled to the Badlands in our beautiful state of North Dakota!

Even though we have had a mild winter here in North Dakota {so far}.....a state that is known for our frigid {wayyyyy belowwww zero} temps I am still longing for spring. With our youngest son being in the hospital and now at home recovering this winter seems to be quite drawn out.

I hope you will enjoy my attempt on sharing more pictures and more posts. I do have a new recipe coming up to share....hopefully tomorrow.

Chicken Alfredo

I think you will love this recipe. A creamy alfredo dish served with a nice salad.....great comfort food for a cold winter night! :)

CHICKEN ALFREDO

6 skinless, boneless chicken breast halves - cut into cubes
6 tablespoons butter, divided
4 cloves garlic, minced, divided
1 tablespoon Italian seasoning
1 pound fettuccini pasta
1 onion, diced
1 (8 ounce) package sliced mushrooms
1/3 cup all-purpose flour
1 tablespoon salt
3/4 teaspoon ground white pepper
3 cups milk
1 cup half-and-half
3/4 cup grated Parmesan cheese
8 ounces shredded Colby-Monterey Jack cheese
3 roma (plum) tomatoes, diced
1/2 cup sour cream
{before serving I like to grind some nice black pepper on top...it's your choice!}

In a large skillet over medium heat combine chicken, 2 tablespoons butter, 2 cloves garlic, and Italian seasoning. Cook until chicken is no longer pink inside. Remove from skillet and set aside.

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

Meanwhile, melt 4 tablespoons butter in the skillet. Saute onion, 2 cloves garlic, and mushrooms until onions are transparent. Stir in flour, salt and pepper; cook 2 minutes. Slowly add milk and half-and-half, stirring until smooth and creamy. Stir in Parmesan and Colby-Monterey Jack cheeses; stir until cheese is melted. Stir in chicken mixture, tomatoes and sour cream. Serve over cooked fettuccini. {I used what I had on hand....which was thin spaghetti!}

Creamy Chicken Alfredo.....it's what's for supper in Farmchick's Kitchen tonight!!

Before we get going on the photos.....I hope everyone had a blessed Christmas. I wanted to get on here and post before now but LIFE happened and I just didn't get the opportunity. We had a wonderful Christmas with our family....BUT then on Christmas night our little guy got sick again. Many of you know that he was in the hospital with an infection earlier this month. Well...he was going great but then it came back. :( He is on the mend again.....prayers welcome for him to recover fully and get back to his normal happy self!

I have reached 500 followers on my blog....so I am going to have a GIVE AWAY!!!! I am still thinking and planning....so I will let you all know real soon. ;) Make sure you drop in and check it out.

Christmas Candy #1 Chocolate Caramel Candy

Happy Saturday, friends. :) Well, due to all that has been going on around the farm and with our family I am WAYYYYYYY behind on my Christmas baking. I did make these yummy bars the other day. They taste a lot like Snickers....they are really, really good! Try them out....I think your family will love them!

What's your favorite Christmas treat to make? Mine is my Mom's fudge...I have not made that yet though....it would disappear too soon and then I would have to make more!! ;) Even if I hide it...it still seems to disappear!

CHOCOLATE CARAMEL CANDY

Ingredients
2 teaspoons butter
1 cup milk chocolate chips
1/4 cup butterscotch chips
1/4 cup creamy peanut butter

FILLING:
1/4 cup butter
1 cup sugar
1/4 cup evaporated milk
1-1/2 cups marshmallow creme
1/4 cup creamy peanut butter
1 teaspoon pure vanilla extract
1-1/2 cups chopped salted peanuts

CARAMEL LAYER:
1 package (14 ounces) caramels
1/4 cup heavy whipping cream

ICING:
1 cup (6 ounces) milk chocolate chips
1/4 cup butterscotch chips
1/4 cup creamy peanut butter

Directions
Line a 13-in. x 9-in. pan with foil; butter the foil with 2 teaspoons butter and set aside.
In a small saucepan, combine the milk chocolate chips, butterscotch chips and peanut butter; stir over low heat until melted and smooth. Spread into prepared pan. Refrigerate until set.
For filling, in a small heavy saucepan, melt butter over medium heat. Add sugar and milk; bring to a gentle boil. Reduce heat to medium-low; cook and stir for 5 minutes. Remove from the heat; stir in the marshmallow creme, peanut butter and vanilla until smooth. Add peanuts. Spread over first layer. Refrigerate until set.
For caramel layer, in a small heavy saucepan, combine the caramels and cream; stir over low heat until melted and smooth. Cook and stir 4 minutes longer. Spread over filling. Refrigerate until set.
For icing, in another saucepan, combine chips and peanut butter; stir over low heat until melted and smooth. Pour over the caramel layer. Refrigerate for at least 4 hours or overnight.
Remove from the refrigerator 20 minutes before cutting. Cut into whatever size you like. ;)

I hope this post finds you all happy and well. :) Welcome to Fresh from the Farm Recipe Swap!! I know many of you out there have begun your Christmas baking....please share with us!!! After our youngest sons illness we are trying to move on to our happy normal route of things. It has been tough but he is getting better and I thank all of you for your prayers.

I saw these cookies on Pinterest awhile back and pinned them to try. I thought they looked simple to make and would be yummy too. I love a chewy cookie....so these fit the bill!

Ingredients you will need:
1/2 cup softened butter
1 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups all purpose flour

In a large bowl, whip butter with sugar until light and fluffy. Stir in egg and vanilla. Scrape sides and mix again. Stir in dry ingredients until completely combined.

Divide dough into two equal logs {whatever size you desire} and roll in plastic wrap. You can now roll the logs more until you get them nice and circular.

Refrigerate for an hour or until the dough hardens.

When you are ready to bake the cookies, preheat oven to 350 degrees. Line baking sheet with parchment paper. Unwrap the logs of cookie dough and slice into 1/2 inch discs.

Place on prepared baking sheet and bake 9-10 minutes or until bottoms are barely brown. I decided to sprinkle a little colored sugar on each disc just to make them look a tad bit more festive!! ;)

Remove from oven, cool 3 minutes and remove to a cooling rack. They must be good because I just noticed that the rows of cookies are getting shorter and shorter! ;)

A bump in our road

I am sorry that I did not get my Farm Photo Friday linky party up and going. We had a bump in our road.... our youngest was admitted to the hospital on Thursday. This has been the first hospital stay for any of our children....and to tell you the truth it was scary! {the longest two days of my life} He is home now and as long as he is able to take his med, drink and eat he can stay home to recuperate! Prayers for him to return to great health would be appreciated.

I am hoping to get more Christmas baking done soon.....what have you been baking? Please leave me a comment and tell me or just say hi!!

Welcome to Fresh from the Farm Recipe Swap!! I know you all have blogged about the wonderful dishes you have prepared....please share them with us!!!

I am going to get this party started by sharing my Cranberry Apple Pie!!! So festive and the taste is soooooooooooo good--tart yet sweet!

Make your favorite pie crust. :)

Fruit Filling:

2 pounds apples (about 5) cored and sliced. I used Granny Apple this time.
8 ounces fresh or frozen (not thawed) cranberries
1/2 cup packed light brown sugar
3 tablespoons all-purpose flour
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 1/2 tablespoons fresh lemon juice
1/2 stick unsalted butter, cut into 1/2-inch piece

Stir together all fruit filling ingredients except for the butter. Pour into your pie crust. Dot filling with butter. Now you can put on your top crust and crimp.

Punkin and Pinterest :)

I promised when I showed you my Mason jar table decorations {click here} to see them} that I would show you another cute little project that I did.

This is a pumpkin from my garden...I decided to just spruce it up a little by adding some fall colored berries etc. and a cute ribbon. Isn't it sweet? I love how it looks. Sweet and simple right?!?! What could get better than that? I am going to do more....I just have not had a lot of spare time lately.

My recipe swap and farm photo friday linky party are still open....please do share your recipe and your photos....it's a great way to make new friends and get new ideas too. What fun!!!! :)

Now, on to my little talk about Pinterest. If you are not on Pinterest you HAVE to be. It is my newest addiction. What is Pinterest? If you like to surf the web looking for things you are interested in...such as decorating ideas, crafts, recipes....you name it you will find it. Pinterest is like a giant bulletin board...you cut out ideas from the internet and pin them to your board. You can go back and look at all your great ideas that you have found...it's simple and loads of fun!

Gooseberry Patch Galore Monday ~ Recipe #5

Whoa.....I can't believe it is Wednesday already. I just didn't have time to get my recipe shared on Monday nor my recipe swap on Tuesday....sooooo I guess I will do them both today! Things have been wayy toooo crazzzyyyy here. Our youngest has bad fall allergies and then after that starts things start to spiral out of control....he gets sinus problems and does not feel well. They put him on a new allergy med and we are hoping this helps...if anyone has any tips or experience on allergies and allergies with drainage down the back of throat...do please share. This poor Mama wants her baby to feel good!!

So moving on to my recipe. This recipe is out of Gooseberry's Big Book of Homecooking. I LOVE this book so much. :)

S'MORES MUFFINS

1 c. shortening

4 eggs

1 c. sour cream

2 c. sugar

1/4 c. baking cocoa

2 t. salt

3 c. all-purpose flour

2 t. baking soda

1 t. cinnamon

1 c. graham crackers, crushed

1 c. mini marshmellows

1 c. chocoate chips

Garnish: marshmallow creme, graham cracker crumbs

Combine shortening, eggs, sour cream and sugar; set aside. Mi together remaining ingredients except garnish in a separate mixing bowl; add shortening mixture to cocoa mixture. Fill greased muffin tines 3/4 full and bake at 325 degrees for 30 to 40 minutes. Cool in pan 20 minutes; remove muffins from pans. Garnish with marshmallow creme and graham cracker crumbs. I have to admit...I didn't do this part. I THOUGHT I had some marshmallow creme...but when I went to the pantry to find it....it was not there. ;) They tasted good without the garnish but would probably look prettier with it!

Simple & Cute fall table decorations

Hi there....hope this fall day finds you all feeling happy and cozy too! :) I made these cute fall decorations the other day so I thought I would share with you all.

I didn't spend a lot of money on these decorations....and I think they are simple yet cute. I used mason jars, which I already had. Have I ever mentioned that I LOVE mason jars?? I filled the jars with either left over candy corn or some potpourri berries. Next, I tied a ribbon around the jar and added some fall berries and leaves. Lastly, I put a candle inside the jar.

I am going to set these down the middle of my dining room table with my little mini punkins I grew in my garden. Click here if you want to see my basketfull of just picked punkins. I am picturing our Thanksgiving table with the jars and punkins all lined up down the middle. I think it will look quite festive! I will be sure to show you a picture when I get it all done!

I have something else to show you that I made with my bigger pumpkins that I grew.....but.....I think I will share that with you another day! Hope you will come back and check it out!

Gooseberry Patch Galore Monday ~ Recipe #4

Welcome to Gooseberry Patch Galore Monday....yes, I am a day late.....sorry!! Anyway, thanks everyone for stopping by for the comments and the emails. I love hearing from you all. Also, thanks to those of you that have been playing along in my recipe and picture parties!!! :)

Apparently I have a thing with malt as my last recipe posted was a yummy malt cookie. I love chocolate malts and always add EXTRA malt to mine....so when I saw this recipe for Malted Hot Chocolate I thought it sounded perfect. Since we just had our first snow....and the wind was blowing like crazy this was a perfect drink to make. It's creamy and not too sweet. My whipped cream melted down by the time I got to take the picture but you get the point!!

Malted Hot Chocolate

1-oz. sqs. bittersweet baking chocolate, chopped
1/2 c. boiling water
1/2 c. whipping cream
1 c. milk
3 T. malted milk powder
Garnish: whipped topping, crushed malted milk ball candies
Place chocolate in a small bowl; pour boiling water over chocolate. Let stand for 3 minutes. In a small saucepan, combine cream and milk over medium heat; bring to a simmer. Stir in malted milk powder; set aside. Whisk chocolate mixture until smooth; add to milk mixture. Garnish with whipped topping and crushed candies.I didn't crush my candy....I wanted to enjoy it whole! ;)

Gooseberry Patch Galore Monday ~ Recipe #3

Yes, I know it's not Monday....but as I stated in my last post....time just ran out! So, welcome to Gooseberry Patch Galore Monday....on Wednesday!!!! ;)

Today I made GIANT CHOCOLATE MALT COOKIES and let me tell you that are scrumptious!! I decided not to make them quite as GIANT as suggested in the recipe. As soon as the last batch is baked a few cookies will be heading out to the field to be enjoyed as we combine our sunflowers. :)

GIANT CHOCOLATE MALT COOKIES

1 c. butter-flavor shortening

1 1/4/ c. brown sugar, packed

1/2 c. malted milk powder

2 T. chocolate syrup

1 egg

2 c. all-purpose flour

1 t. baking soda

1/2 t. salt

1 1/2 c. semi-sweet chocolate chunks

1 c. milk chocolate chips

Combine first 5 ingredients in a large mixing bowl; mix at medium speed with an electric mixer for 2 minutes. Add egg; ix well and set aside.

Stir together flour, soda and salt; add shortening mixture, mixing well. Fold in chocolate. Shape into 1/2 -cup balls; press down to form 3 1/2-inch round discs. Arrange 3 inches apart on ungreased baking sheets. Bake at 375 degrees for 15 minutes. Cool for 5 minutes; remove to a wire rack to cool completely. Makes 8 cookies. **Note I just made these cookies in regular size--they still taste great...just smaller!! ***

A sweet, salty and simple fall treat

Are you looking for a quick and last minute treat for Halloween or just a simple Fall treat? Well, look no further, my friends. These cute treats are a snap to make and they are quite tasty too!

They are the fall twist of the Christmas Pretzel Treats I made last year. I like how these turned out too.... :) Go ahead, click the link above or click here check them out!

Pretzel checkers

Hershey's Kisses, M&Ms or Sixlets candy

Heat the oven to 170F. Set a number of pretzels (one for each
treat) in a single layer on a cookie sheet lined with parchment paper, then top
each pretzel with an unwrapped Hershey's Kiss.

Bake for 4 to 6 minutes - until the chocolates feel soft when touched with a wooden spoon. Remove the cookie sheet from the oven and quickly press an M&M or Sixlet candy into the center of each Kiss. I used Sixlets this time. :)

King Ranch Chicken Casserole

1 c. onion, diced

1 c. green pepper, diced

8 oz. pkg. sliced mushrooms

1/4 c. butter

10 3/4-oz. can cream of chicken soup

10 3/4-oz. can cream of mushroom soup

10-oz. can tomatoes with chiles

1 clove garlic

2 T. chili powder

1 T. chicken broth

12 (6 inch) corn tortillas, torn into quarters

3 c. cooked chicken, diced and divided

16-oz. pkg. shredded Cheddar cheese, divided

Saute onion, pepper and mushrooms in butter in a large skillet over medium heat. Add soups, tomatoes, garlic, chili poweder and broth; heat until bubbly and set aside.

Arrange half the tortilla pieces in a lightly greased 13 x 9 baking dish, with with half the chicken, half the sauce and half the cheese. Repeat layers, Bake, uncovered, at 350 degrees for 30 minutes or until hot and bubbly.

Pumpkin Cinnamon Rolls with Cream Cheese Frosting

Happy Sunday to you! :) I hope your day is going well. I decided to share my Pumpkin Cinnamon Roll recipe today...sooooo yummy plain or with the added Cream Cheese Frosting.

PUMPKIN CINNAMON ROLLS with CREAM CHEESE FROSTING

1/3 cup milk
2 tablespoons butter
1/2 cup canned pumpkin
2 tablespoons sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon pumpkin pie spice
1/2 teaspoon salt
1 egg, beaten
2 1/4 teaspoons dry yeast
2 cups bread flour
1/2 cup brown sugar, packed
2 teaspoons ground cinnamon
2 tablespoons melted butter

In small saucepan, heat milk and 2 tablespoons butter just until warm and butter is almost melted, stirring constantly. In large bowl, {I use my kitchen aide) combine pumpkin, sugar,cinnamon, nutmeg, pumpkin pie spice, and salt. Add milk mixture and beat with electric mixer until well mixed. Now you can beat in your egg and yeast.

Add half of the flour to pumpkin mixture. Beat mixture on low speed for about 5 minutes, scraping sides of bowl frequently. Add remaining flour and mix. Place dough into a greased bowl--flip dough to lightly grease both sides.

Cover and let rise in warm place until doubled - about 1 hour. Punch dough down. Turn onto floured surface. Now knead the dough a few times - sprinkle with flour until the dough is not to sticky to handle. Roll dough into 12x10 inch rectangle.

In small bowl, combine brown sugar and cinnamon. Brush dough with melted butter. Sprinkle with brown sugar mixture. Beginning with long side of dough, roll up jellyroll style. Pinch seam to seal. Cut roll into twelve 1- inch slices. Place rolls in a greased 11 x 13 pan and let them rise again...until doubled in size.

Now bake them at 350 for 20-25 minutes....or until golden brown.

Cream Cheese Frosting
For the frosting:
8 oz. cream cheese, at room temperature
6 tbsp. unsalted butter, at room temperature
1 tbsp. vanilla extract
4 cups confectioners’ sugar, sifted
2 tbsp. heavy cream

Combine the cream cheese and butter in the bowl of your Kitchen Aide and beat on medium-high speed until smooth, about 1 minute. Blend in the vanilla extract. Beat in the confectioners’ sugar until incorporated and smooth, 1-2 minutes. Add the heavy cream to the bowl and beat on medium-low speed just until incorporated, then increase the speed to medium-high and whip for 4 minutes until light and fluffy, scraping down the sides of the bowl as needed.

I am trying something new....I must be a glutton for punishment. haha I know these linky parties take awhile to become an established party....and if you slack off on your blogging sometimes the party participants slack off. Yes...I have learned that through experience. :) I am giving this a try anyway. I hope you will all join in and share a recipe with me and my readers. Gooseberry Patch Recipe #1

I made this dessert for Sunday supper yesterday. It was quick to whip up and no hassles to cook. You just put it in your slow cooker and you are done!

I decided to post my Gooseberry Patch recipe every Monday. Tuesday I am hosting a recipe linky party. I am hoping you can join in on the fun. I would love to see anything you are making in your kitchens. :) It doesn't have to be a Gooseberry Patch recipe but it surely can be!!

Hot Fudge Spoon Cake

1 cup all-purpose flour

1 3/4 cup brown sugar, packed and divided

1/4 cup plus 3 tablespoons baking cocoa, divided

2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup milk

2 tablespoons butter, melted

1/2 teaspoon vanilla extract

1 3/4 cup hot watewr

vanilla ice cream

Combine flour, one cup brown sugar, 3 tablespoons cocoa, baking powder and salt in a medium bowl. Whisk in milk, butter and vanilla. Spread evenly in a 3 1/2-quart slow cooker. Mix together remaining 3/4 cup brown sugar and 1/4 cup cocoa; sprinkle evenly over top of batter. Pour in hot water; do not stir. Cover and cook on high settings for 2 hours, or until a toothpick inserted one-inch deep comes out clean. Spoon warm cake into bowls; top with vanilla ice cream, if desired. Serves 6

Fall Cake Batter Rice Krispie Bars

You have probably seen these bars around the internet lately. I decided I would try them using fallish sprinkles....since Fall is almost here!!! Rice krispie bars and lots of sprinkles.....a kids dream right?!? :)

Try them out.....see what you think. I like the cake batter taste....it's a subtle taste but I think it tastes pretty good! I can't wait to see what my kids think of them.

Cake Batter Rice Krispies Recipe

Ingredients:
3 Tbsp. butter
1 (10 oz.) bag of mini-marshmallows
1/3 cup yellow cake mix
6 cups crispy rice cereal
1 (1.75 oz.) container of sprinkles

~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*
Melt butter in a large saucepan over low heat and add marshmallows. Stir until they begin to melt, adding in cake mix one spoonful at a time so its combined. Stir in cereal so it is completely coated with marshmallow mixture. Sprinkle in half of the sprinkles and mix. Press into a baking dish and top with remaining sprinkles. Let sit for about 30 minutes before cutting.

Chewy Chocolate Cookies that is...with peanut butter chips!! I made these yummy cookies this morning to take out to the field. They are simple yet delicious - crisp yet chewy. I think that when you spend long hours in the field you deserve a few good cookies! ;)

CHEWY CHOCOLATE COOKIES WITH PEANUT BUTTER CHIPS

INGREDIENTS:
2 cups all-purpose flour
3/4 cup HERSHEY'S Cocoa
1 teaspoonbaking soda
1/2 teaspoonsalt
1-1/4 cups (2-1/2 sticks) butter or margarine, softened
2 cups sugar
2 eggs
2 teaspoons vanilla extract
1 (10-oz. pkg.) REESE'S Peanut Butter

Heat oven to 350°F. Stir together flour, cocoa, baking soda and salt; set aside.

Beat butter and sugar in large bowl with mixer until fluffy. Add eggs and vanilla; beat well. Gradually add flour mixture, beating well. Stir in peanut butter chips. Drop by rounded teaspoons onto ungreased cookie sheet.

Bake 8 to 9 minutes. (Do not overbake; cookies will be soft. They will puff while baking and flatten while cooling.) Cool slightly; remove from cookie sheet to wire rack. Cool completely.

Our fields and fields of sunflowers are now in full bloom and oh what a GLORIOUS sight! I can stand on our deck or look out my kitchen window and enjoy the view--because of crop rotation this is not always possible!

I have so many recipes and pictures that I want to share with you but I have been busy trying to get things organized with harvest and school starting. I think I am doing pretty well so I should be back to share with you all. :)

Field of dreams............

A pretty picture taken from my front deck. First you see one of our fields of sunflowers {the green}...then as you travel along you see the road....on the other side you see the yellow field....that is one of our fields of blooming canola. It's beautiful here. I love this time of year on the farm.

We are just out in the pasture enjoying ourselves. We thought we would mosey on over and say HOWDY!!

Busy...busy...busy here on the farm. My garden finally started to produce after the slow start it had due to the rain and cool weather. I have beans now coming out of my ears....cukes and the tomatoes are finally starting to ripen. I am going to can beans and peaches tomorrow. :)

Wheat harvest is just around the corner. Things will get REALLY busy then!!!

What's going on in your neck of the world? I want to know....I am interested! :)

Thanks for coming. :) Life on the farm is busy as usual. With August brings school, canning and harvest. I love this time of year and hate it too! Sounds confusing, I know. I LOVE harvest...both my garden and harvesting of our crops but ever since my kids have started school I also hate this time of year because I hate sending them back to school. I always struggle this time of year with these feelings. So, on to our my recipe.

CHICKARITOS are basically an eggroll with a mexican twist! I love them and I love that they are made the HEALTHY way {baked not fried}!!

Chickaritos
3 cups finely chopped cooked chicken
1-1/2 cups (6 ounces) shredded sharp cheddar cheese or whatever you have!
1 can (4 ounces) chopped green chilies
1/2 cup finely chopped green onions
1/2 cup corn

3/4 cup salsa
1 teaspoon pressed garlic
1/4 teaspoon pepper
1/4 teaspoon ground cumin
1/4 teaspoon paprika
you can also add black beans but I didn't have any
egg roll wrappers
Guacamole
Salsa

Shred or chop chicken.

In a large bowl, combine the chicken, chilies, onions, cheese and seasonings.

Put approx. 2 tablespoons filling in middle and roll it up! If you need directions on how to roll up an eggroll wrapper just refer to the package. :) It's pretty easy.

Bake at 400° until golden brown or browned to your liking.

Serve warm with salsa and guacamole.

The weather here has been warm and that really sparked our crops to start growing. I looked out my kitchen window and could not believe how much this particular crop has grown.

What is it you ask? Well, my friends this is a field of sunflowers. Can you imagine what a beautiful sight will greet me every morning when they start blooming? They will be there everyday in all of their glory, shining bright and following the sun. Not too many things more beautiful than hundreds of acres of sunflowers!!

In the second photo you can see the rows....which I always think looks so nice. The brownish/rust area you see in the middle of the picture is a low spot that was too wet to seed. Weeds were growing there until my farmer sprayed the field. :) With all of the rain this spring we have a lot of wet areas in our fields.

As I survey our land and our crops I can't help but be soo thankful that God has given us the opportunity to be stewards of his land. I am so thankful that we are able to live out here and raise our family. I can't think of ANYTHING I would rather do. What are you thankful for today?

This recipe submitted by The Rickett Chronicles looks yummy. Cracker Barrel Hashbrown Casserole looks similar to a recipe I make but does have a few different ingredients. I am going to try it one of these days. :)

I am starting out this weeks party with my Layered Enchilada Casserole {for the slow-cooker}. It is a simple meal and it won't heat up your house.

Farmchick's Layered Enchilada Casserole {for the slow-cooker}

Things here on our farm are busy as always. Summertime is a busy time of year for farmers. We love it though and feel blessed to be so busy!

This layered southwestern dish is perfect for this summers hot weather as it is made in a slow-cooker!

Farmchick's Layered Enchilada Dish

4 pounds lean ground beef {I use extra-lean}
1 small onion, chopped
1 can (15 ounces) refried beans {fat free}
1 can (10 ounces) diced tomatoes with mild green chilies, undrained
1 cup salsa {your favorite}
1/2 cup chopped green pepper
2 teaspoon chili powder
1 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon pepper
1 cup (4 ounces) shredded Monterey Jack cheese
1 cup (4 ounces) shredded cheddar cheese
flour tortillas (6 inches)

In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the beans, tomatoes,salsa, green pepper, chili powder, salt, cumin and pepper. In a small bowl, combine the cheeses; set aside.

Cut three 25-in. x 3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 5-qt. slow cooker. Coat strips with cooking spray. Place two tortillas in slow cooker, overlapping if necessary. Layer with beef mixture and cheese. Repeat layers. You can layer however you want. That is the fun thing about cooking you personalize your meals. You can use only three tortillas and make big beefy layers or you can use more tortillas and have thinner layers of beef. I used 5 tortillas because our family likes the tortillas. Oh, you can also use corn tortillas - we like both flour and corn. This makes a big hearty dish.....you can half this recipe and it will still work out just great.

Cover and cook on low for 2 to 2-1/2 hours or until heated through. Using foil strips as handles, remove enchilada dinner to a platter.

Cut, garnish with favortie toppings.....EAT!!! :)

Time goes by.....quickly!

HELP!! Please someone put the brakes on our summer!! I cannot stand the thought of my kids going back to school. I know....it is over a month away but we are on the downhill slide and this is usually the time I start getting that icky feeling!!

I have been cooking {as usual} trying to think of an assortment of "farmer-in-the-field-friendly meals" like these roast beef sammies. My farmer it seems is always spraying and always in a hurry. Conditions have to be just right to be out in the field spraying so when he can be out there I don't want to slow him down so that is when I try to make him a meal he can eat with one hand!! These buns you see pictured here are quick and easy...I posted the recipe a few years back. Go HERE to see the recipe.

Here is my farmer spraying.......again! We are hoping he gets caught up on his work soon so that we can go back to the lake.

This is a picture I took at the lake last week when we were there spending a few fun and relaxing days fishing, tubing and just floating around. :)

Ooey Gooey Caramel Rice Krispy Treats

Caramel Rice Krispy Treats

8 tablespoons butter, divided
8 cups miniature marshmallows, divided
8 cups crisp rice cereal, divided
1 package (14 ounces) caramels I used the Kraft caramel bits that you find in the baking section -- much easier than unwrapping all those caramels!
1 can (14 ounces) sweetened condensed milk

Directions: In a large saucepan, melt 2 tablespoons butter and 4 cups marshmallows; stir until smooth. Stir in 4 cups cereal. Pat into a greased 13-in. x 9-in. pan; set aside.

For caramel filling, place the caramels and 4 tablespoons butter in another saucepan; cook and stir over low heat until melted. Stir in the milk until smooth. Cool for 10 minutes; pour over cereal layer. Refrigerate for about 30 minutes or until firm.

In a large saucepan, melt the remaining butter and marshmallows. Stir in remaining cereal. Spread over caramel layer. Cover and refrigerate for 30 minutes or until firm. Cut into bars. Store in the refrigerator. Now, start handing them out to your family and friends..............so you don't eat them all yourself!! ;)

Little calf faces

I just cannot get enough of them. When we check cows I always take my camera with. I have LOTS of pictures of our cows. I know, it seems strange....how many pictures of your cows do you need?? I can't help myelf I think they all have their own personality and I love capturing them.

A cute little calf -- look at her cute face and those long, long eyelashes. :) Is this not adorable???

My farmer filling his sprayer in preparation to go spraying.

This one of our semis - the trailer loaded with water and chemical.

He can load the sprayer on the back too.

Just starting to spray. It has been SO wet here so he has not been able to get
out and spray. The weeds are coming in full force and it is driving my
hubby crazy!! He likes to see nice clean, weed-free fields.

Yes, I made sure to roll up my window!!!

He is in hurry as there are some crazy looking storm clouds.

I am now riding with him in the sprayer. This is the GPS system.

An easy 4th of July treat - fun for the kiddos to make! :)

Yes.......I first posted this in 2009 but I thought I would post it again since it is such a cute and easy treat to make. Kids love doing this little snack....with chocolate and sprinkles what more could a kid ask for?!?!? :)

Pretzel Sparklers

Milk chocolate or white chocolate chips (follow directions on package to melt)
package (10 ounces) pretzel rods
Colored candy stars or sprinkles

Directions:

Dip each pretzel rod about halfway into chocolate; allow excess to drip off. Sprinkle with stars. Place on waxed paper to dry. Yield: about 2 dozen.

Patriotic treat and the flooding here.

The 4th of July is almost here. I LOVE the 4th but I am not quite ready for it to be here. I don't want our summer to be going so quickly.....but it is.

As many of you know we have a horrendous flood here in my wonderful state. There is such sadness as thousands of people will lose their homes. We watch the live coverage around the clock and I have cried many times as I see friend and strangers homes with water up to the roofs and there are even some people that the flood water has actually covered the roof and their homes are no longer visible. We have all banded together to help each other get through this. Neighbor helping neighbor, friend helping friend and stranger helping stranger. I am so proud to be a NORTH DAKOTAN!!! Please keep the people of my state in your prayers.

So.............on a lighter note I am posting this recipe {for a second time} to try to do something cheerful and upbeat! PATRIOTIC FROZEN DELIGHT is a delightfully easy dessert to make and it just looks so happy and of course.....patriotic!! :) I have some other patriotic ideas I want to share with you but I will start off with this one.

Patriotic Frozen Delight

1 can (14 ounces) sweetened condensed milk
1/3 cup lemon juice
2 cups (16 ounces) plain yogurt
2 cups miniature marshmallows
1/2 cup chopped pecans
1 cup sliced fresh strawberries
1 cup fresh blueberries

In a bowl, combine milk, lemon juice. Stir in yogurt, marshmallows and pecans. Spread half into an ungreased 11-in. x 7-in. dish. Sprinkle with half of the strawberries and blueberries. Cover with the remaining yogurt mixture; top with remaining berries. Cover and freeze. Remove from the freezer 15-20 minutes before serving.

A painful waiting game is on in N.D., where officials

say they have done all they can ahead of an anticipated

record-breaking river surge this weekend.

This picture was taken last night.......in our town.The
flood waters are to get up to 10 feet higher by this weekend.

Our farm/home is not in danger of the flood waters but

many of our friends have had to evacuate their

homes and wait for the water to flood their homes.

We have much sadness and heart break.

A cupcake for Dad ~ Devils Food Peanut Butter Cupcakes

Are you looking for a decadent cupcake that will tempt your taste buds? If so, look no farther! :) These cupcakes are delicious........NOTE: they are not however, low calorie!! That's okay.........it's for Father's Day right?? :)

Devil's Food Cupcakes
3/4 cup unsweetened Dutch-process cocoa powder
3/4 cup hot water
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 1/4 teaspoons coarse salt
1 1/2 cups (3 sticks) unsalted butter
2 1/4 cups sugar
4 large eggs, room temperature
1 tablespoon plus 1 teaspoon pure vanilla extract
1 cup sour cream, room temperature

Peanut Butter Frosting
3 sticks Unsalted Butter, softened
1 cup Creamy Peanut Butter
2 Tbsp pure Vanilla Extract
2 lbs Powdered Sugar
3-4 Tbsp Milk

Preheat your oven to 350 degrees F. Put cupcake liners in muffin tins. Whisk together cocoa and hot water until smooth. In another bowl, whisk together flour, baking soda, baking powder, and salt.

Melt butter with sugar in a saucepan over medium-low heat, stirring to combine. Remove from heat, and pour into a mixing bowl. With an electric mixer on medium-low speed, beat until mixture is cooled, 4 to 5 minutes. Add eggs, one at a time, beating until each is incorporated, scraping down sides of bowl as needed. Add vanilla, then cocoa mixture, and beat until combined. Reduce speed to low. Add flour mixture in two batches, alternating with the sour cream, and beating until just combined after each.

Divide batter evenly among lined cups. Push a Reese's cup into the center of the batter--making sure the cup is completely covered. **Note....I did not have enough Reese's so I added the Peanut Butter/ Chocolate Swirl chips to the batter instead. This was very good also!!!** Bake about 20 minutes or until toothpick test comes out clean. Transfer tins to wire racks to cool 15 minutes.

Make the frosting but do not frost until the cupcakes are cool!!

Now you can frost and put a mini Reese's cup on top.....just for fun!!!

or not............it's your choice. :)

Rhubarb Crisp Muffins

Whew...........things have been so busy here on the farm. We have had a few days of no rain and let me tell you there has been a flurry of activity around here. The most important being that the tractors are rolling so we are getting some crops planted! I did some speed gardening and got my garden and the majority of my flowers planted.

I have been baking a lot of things to take out to the field for meals. Last night I made these Rhubarb Crisp Muffins. Very yummy!! :) I love the tartness of rhubarb mixed in with sweetness.....just tastes sooooooooooooo good.

Rhubarb Crisp Muffins

2 1/2 C flour

1 tsp baking soda

1 tsp salt

1 1/2 C packed brown sugar

2/3 C Canola Oil

1 C sour cream

1 egg

1 tsp vanilla

1 1/2 C chopped rhubarb

Topping
1/4 cup butter {softened}
1 C Quick oats
1/2 cup brown sugar

Preheat oven to 325 degrees. Put cupcake liners in muffin tins. In a bowl, mix the flour, baking soda and salt. In a separate bowl combine 1 1/2 cups packed brown sugar, canola oil, sourcream, egg and vanilla. Comine. Stir the flour mixture into the batter and fold in the chopped rhubarb. Fill muffin cups about 3/4 full.

In another bowl mix the butter, oatmeal and 1/2 cup butter for the topping of the muffins. Sprinkle on muffins and bake!!

So, this picture was not taken on our farm but taken in our town which has been fighting a flood for several days now. Please pray for the people of North Dakota as we fight many different floods in different towns. Thanks. :)

Machinery dealer that evacuated their lot due to flooding.....they did get most of the equipment out of there before it was too late.

Rainy days..........................

It has been raining............and raining..............and raining. My farmer has not been in the field for days. We are having a lot of flooding problems here in our great state. It rained sooo hard yesterday that water started pouring into our basement. The ground is just soooo saturated. We got it fixed up before the carpet got too wet. People are losing their homes due to the flood so our water problem was very small compared to what others are facing.

I spent my day in the kitchen trying to keep my mind off of the rain.

These homemade Twix bars would be a great addition to your Memorial Day meal. I hope you enjoy them! They are pretty easy to make and they taste great!!

48 Club Crackers (24 for each layer)

Caramel Mixture
1 cup Graham Crackers, crushed
3/4 cup Brown Sugar, packed
1/3 cup White Sugar
1/3 cup Milk
1/2 cup Butter!

Frosting
2/3 cup Peanut Butter
1 cup Milk Chocolate Chips

Put a layer of Club Crackers in a 13 x 9 pan most pans that size will fit 24 crackers. In a heavy saucepan on the stove, combine all ingredients for caramel mixture.

Bring to a boil, continue to stir and boil for approximately 4 minutes. The mixture will be caramel like and pull away from the sides of the pan. Pour over the crackers. Immediately top with another layer of Club Crackers, pressing down slightly. Place in fridge to chill.

Combine frosting ingredients in a microwave safe bowl, and melt for 2 minutes on medium power. Stir until all the chips are melted. Pour the mixture over the crackers, frost and place in fridge to chill until frosting is firm.

Cut and serve! For best results store in the refrigerator

Darling Cheesecake and Mud!

I made these tasty little Mini Cheesecakes for Mother's Day dessert.........I can't wait to share the recipe with you. I think you will like them and they are just sooooo darling. :)

It has been raining for the past two days here..........I cannot stand not seeing the sun for days on end! We have not even started spring planting here..........it's starting to get late. Water is running everywhere and there is MUD everywhere too. Have you ever noticed......mud attracts feet? ;)

Even Sheba has muddy feet........along with everyone else that lives on this farm.

Notice the water standing in one of our fields? It was raining a very fine mist when I took this photograph. See a few of our ladies off in the distance? They are due to have their babies very soon. I hope the sun is shining when that happens.

We have had busy weekend preparing for Easter and of course Easter Dinner too!!. :)

I have most things prepared and ready to pop into the oven. We are having ham, hashbrown casserole, green bean casserole, Easter fruit salad, relish tray, homemade buns, a Ukrainian dish and rhubarb crisp!!

We may be under a winter storm watch {Yes...in April} but I for one am SO ready for spring. I want to smell the warm, earthy smell of freshly tilled soil, I want to feel the warm sun on my face, I want to see my kids outside enjoying the fresh air and I want to see our tractors rolling gently through our fields. :)

Weight Watcher Wednesday ~ Santa Fe Mexican Soup

SANTA FE MEXICAN SOUP

2 lbs chicken breast
14 oz can Mild Rotel
15 oz can black beans
15 oz. can of corn
2 cups can fat free chicken broth
1 small onion chopped
1 garlic clove, minced
2 tsp southwest ranch dressing mix
1 tsp cayenne pepper (or to taste)

Add all ingredients except chicken to crockpot and mix together. Add chicken breast on top. Salt and pepper to taste. Cook until tender.

This soup is very tastey on it's own. You can also embellish with cheese, sour cream and tortilla strips. Of course, if you are looking for a light dish.........don't embellish it!!!! ;)

It's beginning to look a lot like SPRING!!

The sun is shining and it looks like spring may actually come........I was beginning to wonder!

The muck boots are out!!!

In my years of blogging I don't think I have actually mentioned when my birthday is.......so I will let you know that TODAY is my birthday. No exclamation.........it's not THAT exciting anymore. I will say that I am THANKFUL to be where I am at in my life. I am totally happy and content with my hubby, my children, family, friends and our farm. I am so blessed and I thank God everyday for these wonderful blessings. :) I am thankful too for all my blogger friends and followers. :)
