I like to imagine Easter as a beautiful spring day on the prairie...with the sun shining, a slight and warm breeze blowing and birds chirping loudly in the trees. Of course that is not what actually happened here in North Dakota...instead we had snow and wind! In spite of the weather we were still able to enjoy our Easter. Our Easter eggs this year are lovely and vibrant colors-I always add in my Ukrainian eggs just because they are so beautiful! </span><br />

Yesterday was our favorite middle child's birthday so I made his favorite fudgy and chewy brownies. Ever since he was small he liked brownies so much more than cake...so this brownie recipe has been my go to recipe for years and years...it is the ONLY brownie recipe I use. Sometimes I don't add the chocolate chips...they are scrumptious either way.<br />

I tore this recipe out of a magazine sometime in the mid 1990's so I'm not sure where it came from {much like many of my recipes} but I sure am glad that I did! I have made it enough times since then that I really don't even need to look at the recipe. It's pretty simple.<br />

Ingredients<br />
2.5 pounds of potatoes, I don't peel them I just scrub them and make sure they are clean, cubed.<br />
1 small onion, diced.<br />
4 cups of chicken broth. <br />
salt...to taste. It depends on how salty your stock is!<br />
3 tablespoons butter.<br />
1 cup whipping cream.<br />
garnish as desired: green onions, cheese, chives, bacon<br />
<br />
Place all ingredients except the butter and the whipping cream into a crock pot. Cook on low for around 7 hours. <br />
<br />
After the potatoes are cooked through I pureed my soup in my Vitamix but you could also use an immersion blender. I left out a cup or so of potatoes and mashed them a bit so that there would be a few whole pieces. It just depends on what type of texture you want. Put the soup back into the kettle and add the cream. Garnish and serve!! <br />

Here at our farm we are waiting patiently for spring to come and stay. Yes, we have had some very nice days but then it suddenly turns cold again! Like right now...I just saw a very tiny snowflake swirling through the air. I'm ready to be outside in my garden or sitting on our porch. ;).<br />

1- 18 1/2 oz white cake mix<br />
3-oz. package strawberry jello<br />
4 eggs, beaten<br />
3/4 c. oil
1/2 to 1 cup frozen strawberries, sliced and thawed<br />

All you do is combine cake mix, jello mix, eggs, oil and undrained berries.<br />
Fill greased muffin pans 2/3 full. Bake at 325 degrees for 18-23 minutes or until the toothpick tests done. Cool and frost with your favorite frosting. :)<br />

<strong>1 bag of pretzels</strong><br />
<strong>1 cup of butter</strong><br />
<strong>1 cup brown sugar</strong><br />
<strong>2 cups semi-sweet chocolate chips</strong><br />
<strong>Kosher salt or sea salt for sprinkling</strong><br />
<strong>Line a 13×18 inch baking sheet with parchment paper.</strong><br />
<strong>Place 1/2 to 2/3 of the bag of pretzels on the lined sheet and arrange in a single layer.</strong><br />
<strong>Preheat oven to 400 degrees.</strong><br />
<strong>In a small saucepan, over medium heat melt the butter until it starts to bubble. Add the brown sugar and stir to combine. As the sugar warms it will combine with the butter. Stir occasionally just until the sugar and butter come together. DO NOT let the mixture boil.
Pour the caramel mixture as evenly as possible (it doesn't have to be perfect) over the pretzels and then put the pan into the oven for 5 minutes.
After 5 minutes remove the pan from the oven and sprinkle the chocolate chips evenly over the top. Put the pan back in the oven for 30 second to a minute no longer! Remove the pan from the oven. Using a rubber spatula smear the melted chocolate over the top of the pretzels.
Sprinkle salt over the chocolate, be careful don't use too much! Allow the chocolate to set before eating. Break into pieces to serve.</strong><br />

I had 16 people in our dining room for Thanksgiving Dinner on Thursday. I have to say...dinner went off without a hitch...thanks to a little organization starting a few days before Thanksgiving. I served many of our family favorites. Today I am going to share one of my favorites...<span style="color: #660000;"><strong>Festive Wild Rice</strong></span>. The cranberries give it just the right amount of sweetness added to the savory. Yesterday while eating a bit of the leftovers I realized that if you just added some leftover turkey to the rice it would be a delicious casserole. I am sharing the original recipe and if you want to throw in some leftover turkey....go for it!<br />

*follow the directions on your rice package but use chicken broth for the liquid instead of water*<br />

5 Tablespoons melted butter<br />
1 cup slivered almonds<br />
8 green onions<br />
15 oz can of sliced mushrooms<br />
1 cup slivered almonds<br />
salt and fresh cracked pepper to taste *I use quite a bit of pepper*<br />
1 cup Craisens (dried cranberries)<br />

Mix the rice together in a casserole dish. In a saute pan toast the almonds lightly in the butter. Add the sliced green onions and cook until translucent. Add the cranberries and mushrooms and cook for a minute or so. Add the contents of the pan to the mixed rice..add salt and fresh cracked pepper. Taste and season to your liking. This how you would serve it for Thanksgiving. Later you can add as much leftover turkey as you desire. Enjoy! <br />

Pour can of cherry pie filling in bowl and add blueberries stir in almond extract and lemon juice.
Spread fruit mixture over the bottom of a 9x13 baking dish.<br />

In bowl combine together: cake mix, melted butter & oats. Use a fork to combine until chunky.
Spread over top of filling. Place slices of butter over top. <br />

The ground is saturated and we have not been in the field for many, many days. Today the rain has stopped and we have a little sun. I have seen recipes like this around the web but this one I found in my recipe file...it is one I had torn out of a magazine some time ago. I am glad I found it! Preheat oven to 350F Line baking sheets with parchment paper.
Place flour, cornstarch, baking soda and salt in a medium bowl and whisk to combine.
In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until fluffy. Add the egg and vanilla to mixture and blend.
Add flour mixture on low speed. Stir in chocolate chips.
Using a cookie scoop drop dough onto prepared baking sheets; slightly flatten the dough balls. Bake for 8-10 minutes, until golden brown around the edges. DO NOT over bake these cookies. Remove from oven and let cool on pan for a few minutes and then transfer to wire racks.*If you over bake these cookies will be quite hard...remember to bake just until edges are golden....even if the middle looks uncooked...take them out!*</span><br />

Gradually beat in sugars; mix well. Add eggs, one at a time; beat well after each addition. Mix in vanilla. Add flour mixture; stir until just combined. Fold in remaining ingredients. Drop by cookie scoopfulls, onto ungreased baking sheets. Bake at 350 degrees for 15-17 minutes or until edges are lightly golden. 1 box Devil's food chocolate cake mix<br />
1/2 cup warm water<br />
4 eggs, beaten<br />
1 cup vegetable oil<br />
1 cup sour cream<br />
1 small package instant chocolate pudding<br />
Mini Rolos candies, 2 per cupcake (one for inside, one for garnish on top)<br />

Preheat oven to 350 degrees. Line a muffin tin with cupcake liners. In stand mixer bowl, combine all ingredients except Rolos. Prepare cake mix as stated on cake mix box! Scoop batter into prepared cupcake pans, filling almost to the top of the liner. Press one Rolo into each cup of batter. Bake at 350 degrees for 18-23 minutes or until cupcakes spring back when lightly touched. Remove from oven and allow to cool 5 minutes. Remove from pans and allow to fully cool on wire racks.<br />
<br />
Caramel Butter Cream Frosting:<br />
1cup chilled Heavy Whipping Cream<br />
1 stick butter, softened<br />
1 1/4 cup powdered sugar<br />
pinch of Kosher salt<br />
5 tablespoons caramel sauce
{double this recipe if you like a lot of frosting}<br />

Whip until fluffy. Of course, don't forget to scrape the sides. I used my kitchen aid with the whisk attachment.<br />
<br />
Chocolate Ganache:<br />
1/4 cup Heavy Cream<br />
1 cup semi sweet chocolate chips<br />
1 tablespoon honey<br />
1 teaspoon vanilla<br />
<br />
Heat cream and honey but do not boil. Stir in chocolate chips. Stir mixture until smooth. Allow to cool until almost room temperature.<br />
<br />
To assemble:
Pipe frosting onto each cupcake. Chill frosted cupcakes so that the ganache does not melt frosting. Drizzle gananche on top of frosting and cupcake. Store in refrigerator..take out an hour or so before serving. :)<br />

<b><span style="font-size: large;">Caramel Rolls with Cake Mix</span></b></div>

2 1/2 cups warm water</div>
<div>
4 1/2 teaspoons yeast</div>
<div>
1 box yellow cake mix</div>
<div>
4 1/2 cups flour</div>
<div>
3 eggs</div>
<div>
1/3 cup oil</div>
<div>
dash of salt</div>
<div>
brown sugar</div>
<div>
cinnamon</div>
<div>
whipping cream</div>
<div>
butter</div>

Mix the yeast into the warm water. Set aside and let proof. In a large bowl ( I used my kitchen aid) mix cake mix, flour and salt. Add 3 eggs, slightly beaten, oil and yeast mixture...mix well. Let dough rise until doubled. Roll it out and spread butter on the dough and sprinkle with cinnamon and sugar. {Use as much butter, cinnamon and sugar as you like} Roll up and cut the rolls. Put brown sugar and cinnamon on the bottom of a large cookie sheet sprayed with Pam. Lay rolls on top. When ready to bake pour whipping cream on top. Bake at 350 degrees until done. I don't like to put a time for something such as caramel rolls....my family likes the rolls just baked until done but not hard! I also made a little extra caramel to add in case the rolls didn't have enough. Just add whipping cream, brown sugar and a dash of salt to a sauce pan and cook until slightly thickened. Add to the top of your rolls if it looks like you want more caramel! </div>

I know many of you will think this recipe is not detailed enough. If you are a long time follower of mine you will know that I have said that recipes are really hard for me as most times I do not follow a recipe...I just add here and there! If you have any questions...just ask! :) </div>

1-1/2 t. baking powder

1 T. baking soda

1/2 t. salt

6 c. long-cooking oats, uncooked

2 -12-oz. pkgs. semi-sweet chocolate chips

In a very large bowl, blend together shortening, eggs, sugars and vanilla; set aside. <br />

In a separate large bowl, combine flour, baking powder, baking soda and salt; mix well. <br />
<br />
Slowly stir flour mixture into shortening mixture. Add oats and chocolate chips; mix evenly. Form into walnut-size balls; place 2 inches apart on greased baking sheets. Bake at 350 degrees for 12 to 15 minutes, until edges are lightly golden. Cool on wire racks.<br />
