{healthy} strawberry yogurt pops

Lately the strawberries have been sooo good...so I decided to make a few treats with them.  This treat just happens to be healthy..and your kids will love them too!  It's a win, win situation right?

This recipe is not an exact recipe...truth be told...I hardly ever measure when cooking and this is no exception. 

Strawberry Yogurt Pops
1-2 cups fresh strawberries...washed and stems removed
1 cup plain nonfat Greek yogurt {lots of protein}
1/2 c Truvia {more or less to taste} you can also use sugar or your favorite sweetener of choice
1-2 teaspoons of pure vanilla

1-2 teaspoons lemon juice
Put strawberries in blender.  I have a Vitamix which I LOVE...it blends up the seeds which makes for a nice, smooth pop. 
Blend until smooth.
Add yogurt, Truvia, lemon juice and vanilla.  Blend until well mixed.  Pour into your pop molds...and throw them in the freezer.  Wait patiently for them to freeze!  Try them...you will love them and so will your kids!  :)

Favorite Chocolate Chip Cookies

It has been raining and raining...for what seems endless days.  The ground is saturated and we have not been in the field for many, many days.  Today the rain has stopped and we have a little sun. We hope the sun and wind can dry out our fields soon so we can resume planting.  I did some baking today since it is so blasted muddy outside! 

I L*O*V*E these chocolate chip cookies...they are a perfect combo of soft, crisp, chocolatey and sweet!  I have seen recipes like this around the web but this one I found in my recipe file...it is one I had torn out of a magazine some time ago.  I am glad I found it!  What is different about these cookies you ask...well, this recipe does not call for baking powder but it does use cornstarch.  That is the secret to these gems.  I hope you love 'em too.

Farmchick's Favorite Chocolate Chip Cookie

3/4 cup {1 1/2 sticks} softened butter
3/4 cup brown sugar
1/4 cup granulated sugar
1 egg
2 teaspoons vanilla extract
1 1/2 cups all purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
2 cups bittersweet chocolate chips *~*.  ~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~ Preheat oven to 350F Line baking sheets with parchment paper. Place flour, cornstarch, baking soda and salt in a medium bowl and whisk to combine. In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until fluffy. Add the egg and vanilla to mixture and blend. Add flour mixture on low speed. Stir in chocolate chips. Using a cookie scoop drop dough onto prepared baking sheets; slightly flatten the dough balls. Bake for 8-10 minutes, until golden brown around the edges. DO NOT over bake these cookies. Remove from oven and let cool on pan for a few minutes and then transfer to wire racks.*If you over bake these cookies will be quite hard...remember to bake just until edges are golden....even if the middle looks uncooked...take them out!*

Pretty clouds and rainy days

The clouds started to build.

They really looked pretty, though. 

We knew that rain was headed our way.....again. 

We sat on the porch, with a fire and watched  the rain fall.
For two straight days.
{well, my farmer worked with the cattle}
I sat on the porch....and did things around the house.
We are wayyyy behind in our spring planting.
The SUN is out today!!
