Strawberry Cake with Strawberry Cream Cheese Frosting.....no calories here folks!!!

I made this cake for our Sunday Supper dessert....it was a hit! Everyone loved it. You must try it...if you love strawberries...you will love it too!!


Best Ever Strawberry Cake

1 box white cake mix

3 TB. plain flour

1 (3 oz) box strawberry jello

1/2 cup water

1/2 cup oil

1 cup frozen strawberries, thawed and chopped up

4 eggs

Combine cake mix, flour, Jello and water. Add oil and eggs, one at a time, beating well between. Add strawberries. Beat 2 minutes. Pour batter into well greased and floured 9×13 pan. Bake at 350* for about 45 minutes.

Strawberry Cream Cheese frosting

(adapted from Paula Deen online recipe)


1 stick butter, softened

1 (8 oz) package cream cheese, softened

1 (10 oz) pkg. frozen strawberries -- thawed & pureed

4 cups powdered sugar

It's a cold and blustery day here on the farm....a change from the warm weather we have been having. Looks like a good day for housework and laundry. What's going on around the farm today

It has been beautiful here....warm but sometimes windy.
Busy times....getting ready for spring. I have my gardens all planned out but we don't plant here until the end of May. I am always prepared though!!

Wildrice and Chicken Casserole


Wild Rice and Chicken Casserole

3 Tablespoons extra virgin olive oil

1 medium onion, finely diced

3 carrots, peeled and diced

3 stalks of celery, diced

2 Cups shredded, cooked chicken breast {shredded}

2 Cups white rice {cooked}

2 Cups wild rice {cooked}

1 teaspoon salt

1/2 teaspoon fresh ground black pepper

Cheese Sauce

4 Tablespoons butter

1/4 Cup all purpose flour

1/4 teaspoon salt

1/4 teaspoon fresh ground black pepper

2 Cups chicken broth

2 Cups shredded cheddar cheese {I used 2% cheese}

Top with 1 1/2 Cups shredded cheddar cheese

1. Preheat oven to 350 degrees F. Cook rice--I undercooked slightly so the rice did not get too mushy while cooking in the oven. I don't like mushy rice!!
2. Heat oil into a medium dutch oven or pot over medium heat. Saute onion, carrots and celery until softened. Be careful to not burn!! Stir in chicken, both rices, salt, pepper. Reduce heat to low.

3. To prepare cheese sauce start with a roux. Melt butter into a medium saucepan over medium high heat. Whisk in flour, salt and pepper then slowly pour in chicken broth whisking continuously. Whisk until thick and nearly boiling then stir in cheese until melted. Pour cheese sauce into rice mixture then transfer to a 9×13 inch baking dish. Top with additional cheddar cheese and bake for 25-30 minutes or until cheese is melted through. It's very cheesy and yummy!! Goes great with a lettuce salad. Now, GO EAT....what are you waiting for???

Chocolate Chip Pie and Linky Followers

I am back {as promised} with a simple and yummy recipe. If you like pie and chocolate chip cookies you are gonna LOVE this!!




Nestle Toll House Chocolate Chip Cookie Pie

Use your favorite pie crust recipe to make a deep-dish pie shell
2 large eggs
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
3/4 cup (1 1/2 sticks) butter, softened
1 cup (6 oz.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1 cup chopped nuts {optional} I left the nuts out this time.
Sweetened whipped cream or ice cream

PREHEAT oven to 325° F.

BEAT eggs in large mixer bowl on high speed until foamy. Beat in flour, granulated sugar and brown sugar. Beat in butter. Stir in morsels and nuts. Spoon into pie shell.

BAKE for 55 to 60 minutes or until knife inserted halfway between edge and center comes out clean. Cool on wire rack. Serve warm with ice cream or whipped cream, if desired.
