Rhubarb Upside Down Cake
If you are like me and you have a few packages of rhubarb left that you would like to get rid of before the new crop comes in MAKE THIS CAKE!! It is so easy and really, really good!
1 (18.25 ounce) package moist yellow cake mix
2 cups diced rhubarb
1 1/4 cups white sugar
1/2 pint whipping cream
Directions
1.Preheat oven to 350 degrees. Grease and flour a 9x13 inch pan. Prepare cake mix according to the package directions. Pour batter into prepared pan.
2.In a medium bowl, mix together the rhubarb and sugar. Spoon the rhubarb mixture over the cake batter. Drizzle the whipping cream over the top of the rhubarb.
3.Bake 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cake cool completely before turning it out onto a serving dish.
Hope you enjoy it. Oh and I always refrigerate any leftovers. {if there are any} :)

WWW...and it's Oh SO simple! :)

2 chocolate graham crackers (the whole thing)
2 tablespoons Fat Free Cool Whip
{as you see I didn't have chocolate graham
crackers....so I used the cinnamon--still good--

WWW :) Tangy Chicken and Shrimp Kabobs
Shrimp peeled and deviened
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup bottled Italian dressing (I used fat free)
2 teaspoons thyme
2 cloves garlic
1 tablespoon honey
Thread meat onto kabob sticks.
Sprinkle chicken and shrimp with salt and pepper. Thread on kabob sticks. You could alternate and also use peppers and onions but I chose to put just one type of meat on each stick. I served this with a side or rice and nice fresh spinach salad.

Heat grill. Baste chicken and shrimp with dressing mixture. Continue basting until juices run clear. Add the shrimp last and make sure to baste them also. Cook until opaque.
SOOOOOOOOOOOOOOOOOOOOOOOOOO good and for those of you who don't like shrimp...JUST EAT THE CHICKEN! ;)
1 point for every 2 oz. of shrimp
1 point for every 1 oz. of chicken

Ukrainian Easter Bread Braid
1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1 cup warm 2% milk (110° to 115°)
1/2 cup sugar
1/2 cup butter, softened
3 eggs
1/2 teaspoon salt
5-1/2 to 6 cups all-purpose flour
1 cup golden raisins
GARNISH:
1 egg, lightly beaten
2 tablespoons sliced almonds

If you like a glaze on your sweet bread you can mix up some cream cheese, powdered sugar and a bit of orange juice. :)

Directions
In a large bowl, dissolve yeast in warm water. Add the milk, sugar, butter, eggs, salt and 3 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. {yes I used my kitchen aid} Stir in raisins.
Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. {again, I used my kitchen aid ;) }
Punch dough down. Turn onto a lightly floured surface; divide dough into six portions. Shape each into a 12-in. rope. Place three ropes on a greased baking sheet and braid; pinch ends to seal and tuck under. Repeat with remaining ropes. Cover and let rise until doubled, about 45 minutes.
Brush with egg; sprinkle with almonds. Bake at 350° for 25-30 minutes or until golden brown. Cool on wire racks.
