WWW~Spicy Flank Steak

Well, here I am with another recipe. I hope you all know that you don't have to be on weight watchers to enjoy these recipes! lol I try to post healthy dishes for the "weight watcher" not because you are on WEIGHT WATCHERS! Have I confused you all? I merely post the points for those who are actually counting! :) So, here we go! Oh and before I forget...I so appreciate your comments and emails....they really make my day.....REALLY they DO! :) Thanks!!!! Keep them coming!!


SPICY FLANK STEAK

1/3 cup sour cream
(I used light)
2 tablespoons ground horseradish
2 tablespoons chili sauce
1 tablespoon lime juice
1/2 to 1 teaspoon crushed red pepper flakes
1/4 teaspoon salt
1 beef flank steak (1-1-1/2 pounds)


In a small bowl combine the sourcream and horseradish. Cover and refrigerate for several hours. Combine the chili sauce, lime juice, pepper flakes and salt--brush on each side of the steak.


Broil or grill for 6-8 minutes or until meat reaches desired doneness. Let stand for 5 minutes. Cut across the grain into thin strips. Serve with sour cream sauce. YUM-O!!

We have had a few nice days of 60's but it is soon to start raining

or dare I saw sNoWIng! Yikes...{please no snow-please no snow}

Weight Watcher recipe!



Hello Hello Hello! :)

Thanks to all have stuck with me even through my "lack of posting" days!

Today I have a really yummy yet simple recipe to share with you all.

GARLIC LIME SHRIMP


One pound uncooked shrimp, peeled and deveined

5 garlic cloves, minced
1/2 teaspoon salt
1/4 to 1/2 cayenne pepper
2 tablespoons olive oil
3 tablespoons lime juice

Hot cooked pasta (I used whole wheat)


In a large skillet, saute the shrimp, garlic, salt and cayenne in
the olive oil until the shrimp turn pink, about 5 minutes. Stir
in lime juice and parsley. Serve with pasta.


6 servings
7 points per serving

Sit down and enjoy it with your family.
Taking the time to share a meal together
is so important. :)

WWWednesday! :)




MEXICAN SHREDDED CHICKEN




24 oz (1 1/2) lbs chicken breast
14.4 oz can fat free chicken broth
14.4 oz can diced tomatoes with mild green chilies
15 oz can black beans
1 can corn
1/4 cup of your favorite chunky salsa
4 scallions, chopped
1 tsp garlic, chopped
1/2 cup onion
1 tsp cumin
1 tsp cayenne pepper (or less if you don't want it too spicy)
1-3 tsp fresh chopped cilantro
salt and pepper to taste (just depends on how much of a cilantro taste you like)



Combine chicken broth, beans, corn, onions, garlic, tomatoes, cilantro, scallions, cumin, cayenne pepper and salt in the crock pot. Season chicken breast with salt and put on top. Cook on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Add salt and pepper if needed.

8 servings ~ 4.5 points per serving

Serve on top of a bed of lettuce, rice or a tostada shell. (add in extra points for shells or rice)

This spaghetti dish with a twist will have people wondering what the ingredients are. You will go home with an empty platter and many others will go home with a new recipe! Try it....you'll like it! :)

Church Dinner Spaghetti

13. 25 oz. whole wheat thin spaghetti, uncooked
1 lb. lean ground beef
1 jar (24 oz.) spaghetti sauce
8 oz. 1/3 fat Cream Cheese, cubed
Grated Parmesan Cheese to taste

Instructions

Cook spaghetti as directed on package.

Brown meat in large skillet; drain. Return meat to skillet. Stir in sauce and cream cheese; cook on low heat 3 to 5 min. or until sauce is well blended and heated through, stirring frequently.

DRAIN spaghetti. Add to sauce; mix lightly. Place on platter; top with Parmesan.

Ok....so I didn't get back to my regular posting....





I really truly meant to get my regular posts written. Life just got too busy.
I think I should be able to starting on Monday. {I hope}

We have had fog for days and days and days. I am so ready for some sunshine.
I am ordering my seeds and have spring fever pretty bad.

Here are a few pictures taken around our yard. As you can see everything is covered in frost.
It gets so heavy that you will see if falling off the branches....just like snow.
Pretty? Yes of course....but it sure doesn't look very SPRING like does it?
It is in the 30's so that is nice....we just need some SUN!

I'm back! :)



We took a spur-of -the moment- trip last Wedneday

and we did not come home until Sunday! It was so fun

to get away and enjoy ourselves. It happened all because

my farmer was looking at new sprayer in Iowa. So, we all

decided to go and have a mini-vacation in Minneapolis!



We stayed at the Raddison in Bloomington which has

the nation's largest indoor waterpark. {waterparkofamerica.com}


A good time was had by all! :) We are home now and I

am scrambling to get caught up on laundry and other chores.


I missed checking out what you all have been up too! Leave
