Well, it's been a great weekend....due to the weather the kids didn't have school today so it was a nice and cozy {LONG } weekend at home. The wind has been howling outside and blowing the snow all around. I decided that this would be the perfect day to bake.
FARMHOUSE BLUEBERRY MUFFINS
1/2 cup old fashion oats
1/2 cup orange juice
1 egg
1/2 cup canola oil
1/2 cup sugar
1-1/2 cups all-purpose flour
1-1/4 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup fresh or frozen blueberries
TOPPING:
2 tablespoons sugar
1/2 teaspoon cinnamon
In a large bowl, combine oats and orange juice; let stand for 5 minutes. Beat in the egg, oil and sugar until blended. Combine the flour, baking powder, salt and baking soda; stir into oat mixture just until moistened. Fold in blueberries. Fill greased muffin cups two-thirds full. Combine topping ingredients and sprinkle over batter.
Bake at 400 degrees for 20-25 minutes or until a toothpick comes out clean. Cool five minutes before removing from pan to a wire rack.
These muffins have a little different taste and texture then regular blueberry muffins.

Hey Farmchick! Just had to tell you that I just took your muffins out of the oven. I modified the recipe just a bit, used all whole wheat flour and 1/4 cup brown sugar as well as 1/4 white sugar. blueberry muffins are one of our very favorites, especially my oldest son, Josiah. I will have to give this a try.
Sounds delicious! I am going to search through my freezer(no easy task) for my tiny Maine blueberries and whip these babies up first thing tomorrow morning.
