Quick & Easy Bun Recipe

Yes, I am still here~~just really busy! :) I had several comments and emails requesting that I post the recipe for the buns I pictured a few posts back. So, I thought I would oblige by posting it today!




Farmchick's Quick & EZ Buns


Ingredients:
2 tablespoons active dry yeast
1 cup plus 2 tablespoons warm water (110° to 115°)
1/3 cup vegetable oil
1/4 cup sugar
1 egg
1 1/2 teaspoon salt
3 to 3-1/2 cups all-purpose flour


Directions: In a large bowl, dissolve yeast in warm water. Add oil and sugar; let stand for 5 minutes. Add the egg, salt and enough flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 3-5 minutes. Do not let rise. Divide into 8 pieces; shape each into a ball. Place 3 in. apart on greased baking sheets. Cover and let rest for 10 minutes. Bake at 425° for 8-12 minutes or until golden brown. Remove from pans to wire racks to cool.


Okay--as you know you can divide this how you want to...if you want smaller buns divide into 12 pieces. I usually make 8 buns out of each portion but I double or triple the recipe because 8 buns just doesn't do it for us-especially when we are out in the field.

The tractors are resting................

The tractors are finally at rest! We are done seeding our crop.


It was a long haul....many long days and nights.....


but we made it! AGAIN! :)



Looks like it was just in time! God has decided to bless us with some rain....


A lot of our crop is up now so it could use a nice soft rain to water it!


The clouds are really building up near our shop.



I like this cloud...look how tall and puffy it is getting!

If you look really hard you can see part of my

house through the trees.

So, what now you ask?

Well, we had our crop sprayed by the local

agronomy business so we are busy working

on 4-H projects, showing animals & getting

ready to head to the lake! WHEW! I am

tired already! I hope you all have a

Hello there! I hope this post finds everyone enjoying the warm summer sun! The sun here is playing hide and seek with me today!

I thought I would post something maybe a little different for Father's Day. Most years I do a lot of grilling because I guess the Father's around here like a big burger or a nice juicey brat. This sandwich that I am about to post is big on flavor and hearty enough for all Dad's! It's just not made on the grill!

Barbequed Pork Sandwiches
Take a four-five pound shoulder pork roast and remove the skin and fat. Make the spice rub--rub all over the pork. Cover and put in the refrigerator for at least 8 hours or overnight.
SPICE RUB
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon brown sugar
1 tablespoon dry mustard
1 tablespoon onion powder
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and Pepper
1/2 teaspoon cayenne

Now you need to make the sauce. Combine all the ingredients in a slow cooker. Place pork on top and cook on high for 5 1/2 hours.

SAUCE
2 onions chopped
1 green bell pepper, seeded and chopped
1/2 cup packed brown sugar
1/4 cup vinegar
1 cup ketchup
1 1/2 tablespoon chili powder
1 teaspoon dried mustard
3 teaspoons Worcestershire sauce
1 teaspoon salt

When meat is tender shred with fork. You may want to take out some of the excess juice--just depends on how much liquid the roast let out.


I made homemade buns so I thought I would show you what they looked like. If I get a chance I may share the bun recipe with you all too! They are pretty good buns and they only take about an hour to make from start to finish! You don't have to do this but you surely can! It's really not that tough. If you are a beginner this would be a great bun to start with.
To serve--split buns and top with a big ol' helping of meat! :)
I know any Dad will appreciate this big juicey sandwich!!!

RECIPE:Chocolate Chip Banana Bundt Cake....Finally!



CHOCOLATE CHIP BANANA BUNDT CAKE


Ingredients:
1/3 cup shortening
1-1/4 cups sugar
2 eggs
1 teaspoon vanilla extract
1-1/4 cups mashed ripe bananas (about 3 medium)
2 cups all-purpose flour
1-1/4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (8 ounces) sour cream
3/4 cup chopped walnuts (I didn't have any so use only if you want!)
1 bag of Chocolate Chips--milk choc or semi sweet--your choice!


In a large bowl, cream the shortening and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Add bananas and mix well. Combine the flour, baking powder, baking soda and salt; add to the creamed mixture alternately with sour cream, stirring just until combined. Stir in walnuts. Pour about 1/3 of batter into a greased and floured 10-in. fluted tube pan, sprinkle with chips and repeat ending with batter on the top! You can put as many chips as you want--I used the whole bag! :) Bake at 350° for 50-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.


That's it! :) It is pretty simple and I have not yet had a problem getting it out of the pan! Of course, I don't think I have taken this cake anywhere outside of our home. Isn't that usually when bundt cake sticks to the side of the pan??? When you are taking it to someone elses house or maybe a church function???!!!


It has been raining a nice soft rain here on and off for three days. It is a great rain for our crops that already have been planted. It doesn't plaster them into the ground. We still need to finish our seeding so we would like the sun to come out and dry out our fields so we can do that! I still have more flowers and a few things to plant in my garden so I am getting anxious.


I am hoping to come back in a day or two so that I can post a recipe or two that would be great for Father's Day! Of course, the bundt cake would be perfect for any Dad out there! Thanks for stopping by - have a great week!

Have a SWEET weekend everyone!

I hope this post finds everyone in good spirits!
Things here on the farm are busy. We are
still seeding so it is just a race against time.
Our weather is not too great right now.
We have had frost advisories and
even snow predicted in the north-
western part of our state! EEK!

Right now it is clouding up and
we are expecting some rain.
I had intended to post the recipe
for this really yummy

but I have just been summoned
to the field so I guess you will

This cake is so moist and has
several layers of chocolate chips
that melt to perfection! :)
It travels well to the field and
is kid tested & farmer approved!!!!
