Well, here I am ......just like I said I would be. Some of you didn't think I would show up today did you! Hmmm....???????
These Beef and Bean Burritos are easy to make and quite yummy too!
1 pound lean ground beef
tablespoon chili powder
1/2 cup water
1 teaspoon salt
1 cup diced onion
1/2 teaspoon paprika
1/2 teaspoon onion powder
1 clove Crushed garlic
1/2 cup water
1 16-ounce can refried beans
8 10-inch flour tortillas
1 cup enchilada sauce
3/4 cup sour cream
2 cups shredded lettuce
2 cups shredded cheddar cheese
1 medium tomato diced
1/2 cup sliced green onions
black olives
In medium bowl, combine ground beef with flour, chili powder, salt, onion, paprika, onion powder and pressed garlic . Mix all together. Add seasoned beef mixture to water in a skillet over medium heat. Mix well, and break up meat as it cooks.Heat for 5 to 6 minutes or until browned. The finished product should be very smooth, you do not want large chunks of beef. Now heat up the refried beans in covered container in microwave for 1 1/2 to 2 minutes. Place flour tortillas on microwave-safe plate and heat for 25 to 35 seconds. Spread about ¼ cup of refried beans on center of heated tortilla and then spread 1/8 of the meat mixture over beans, now pour about a tablespoon of the enchilada sauce over meat. Stir sour cream, then spread about 1 1/2 tablespoons onto burrito. Arrange some of the lettuce, cheese, tomato and onion onto the tortilla. Fold flaps over and place in a greased baking dish. Pour remaining enchilada sauce over the burritos then sprinkle cheese, green onions and olives. Cover with tinfoil and heat until heated through and cheese is melted. DO NOT let them dry out! Also, you can just roll up the burritos and serve without heating in a baking dish. Both ways are very good! I hope you enjoy!!! Please leave me a comment so that I can visit you too!

Here I am!
Hi everyone. I just wanted to pop in and tell you all that I have NOT forgotten you! I miss visiting you all! Well, I am here to say that come Monday things here should have settled down and I will be back to my normal posting schedule. I hope everyone has a wonderful weekend and I will be back on Monday to post a recipe for these wonderful and simple enchiladas!
I will soon be able to stop in and visit so I can find out what everyone has been up too! I sure do hope you will stop back on Monday to catch my yummy recipe!

It's time to get cookin'!
1/4 cup butter
1/4 cup olive oil
1/4 c. green onions, finely sliced
3 cloves minced garlic
juice of 1/2 lemon
4 bonesless, skinless chicken breasts
1/2 tsp course ground pepper
1/4 cup minced parlsey
1 tomato, chopped
♥ ♥ ♥ ♥ ♥ ♥
Between waxed paper, pound the chicken until flat and approximately doubled in size. In a pan, heat together butter and olive oil, ( I cut down the amount of butter used) saute green onions and garlic. Add lemon juice, chicken,k salt, pepper and parsley. Continue cooking, stirring constantly, for 5-8 minutes, turning chicken once until chicken is cooked through and juices run clear. Add tomatoes and heat through.
Serve with a side of rice and a bunch of broccoi and you have one great meal! Hope you enjoy it!
