We've Built a Household of Faith!

Yes....that means it is our anniversary today!

Time sure flies by quickly!

When you get engaged and then married

you always have such wonderful

hopes and dreams.....and I have to say

ALL OF MINE CAME TRUE!

I could not be happier then I am

today and I could not ask for more.

I have been so blessed to be

married to such a wonderful hard-

working man, who is a loving

husband and Dad...and on top

of that.....we have been blessed with

three beautiful children.........

what more could a farmgirl

want or need!?!

Happy Friday!!

Hi everyone....things have been busy here on the farm....I don't have a lot of time today to do a post but I thought I would just check quickly!! Today is our schools Fall Carnival and I have a long list of things to do...which includes baking two pies for the pie auction!!


I hope you all have a wonderful weekend. I will try to get caught up on everyone's blogs tomorrow morning!

Time to make salsa.....

How do I know that it is time to make
SALSA??

Farming 101

An Indian Summer has set in here on the farm. Last week we had some pretty chilly, wet days. Today the sun is out in full force and we are combining our flax which has gone from the pretty blue flowers I showed you earlier this summer to a dried version!

and is just about ready to harvest.

This is what flax looks like straight off the combine.


Crops and leaves are turning color...
livestock will soon grow thicker coats.... the chilly days of fall are on their way.

But for now we have a few more warm days!

Well, this farmchick has to get out to the field with dinner for the hungry farmer.

I'm BACK and Cowpoke Chili with Rustic Garlic Croutons

I'm here! I'm here! I have had several people ask me what happened to me! Just busy I guess! I am really trying to get back on a roll of blogging in a timely manner! Thanks to those who were worried about me!! :-))

It's a dreary day on the prairie so I decided to whip up a big old batch of
Cowpoke Chili with Rustic Croutons


1 pound ground beef
1/2 pound lean sausage
1 small onion, chopped
1 garlic clove, minced or pressed in your handy dandy garlic press
1 can (10-1/2 ounces) condensed beef broth, undiluted
2 cups V-8
1 can (15-1/2 ounces) chili beans
1 can (15 ounces) kidney beans
1 can diced tomatoes
2 tablespoons sugar
1 teaspoon chili powder
1/4 teaspoon salt
1/8 teaspoon ground cumin
1/8 teaspoon crushed red pepper flakes
Dash cayenne pepper
Dash Dean's Hot Sauce

In a large saucepan, cook the beef and sausage, onion and garlic over medium heat until meat is no longer pink; drain. Stir in the broth, V-8. Add the rest of the ingredients. Bring to a boil. Reduce heat; cover and simmer for 1 hour at least!

Now...for the Rustic Croutons! They are so yummy if you like this sort of thing anyway! I know typically people pair chili with cornbread so if you want a good recipe for cornbread click here. Otherwise give the croutons a try! What I do is clean out my freezer and cut any old french bread, buns ect... then put them on a baking sheet and at a very low heat dry them out and then freeze! Simple.
Now to make the Rustic Garlic Croutons....add some croutons to a big mixing bowl.

In a small mixing bowl add one tablespoon Parkey Butter spray and one tablespoon olive oil. Take that handy dandy garlic press again and press two cloves of garlic into the oil mixutre, mix and drizzle over croutons. If you are saying to yourself 'well, I am going to use garlic powder instead of REAL FRESH GARLIC!" I say to you NO! NO! NO! It is not the same...fresh garlic is the best...try it...it's not that hard to use a press!! There, I am done with my garlic speech now! Mix gently and bake for 15 minutes at 450 degrees...watch them so they don't burn and mix them around gently every few minutes!
Now when you have done all of this....ladle some savory Cowpoke chili into a bowl and sprinkle a few Rustic Croutons on top and enjoy!

National Farm Awareness month and Tex-Mex Pasta Skillet

I bet you didn't know that it is National Farm Awareness month! September is the time to remember America's Farmers and Ranchers! I know..that seems strange that I would say that since I AM a farmer...but I think it is important to do so...I just want people to be aware of all the hard work that goes into the wonderful food products that are provided to you because of our dedicated farmers and ranchers! I will be posting some other things through out September on that subject...but for now let me show you what's for supper tonight!!!
TEX-MEX PASTA SKILLET
4 cups pasta (any kind you like)
2 pounds chicken breast, cut into chunks
2 1/2 cups chunky salsa
2 cups frozen corn
1 garlic clove---pressed
1 large onion
1 large green peppper
salt and pepper to taste
1 cup low fat shredded mexican style cheese
Cook pasta as directed.
I of course, used our Dakota Growers Pasta


ND grows some of the best durum wheat

which in turn is milled into seminola to make premium


pasta...right here in our wonderful state!

So, while your pasta is cooking.....

heat a large nonstick skillet with a

splash of CANOLA oil.

Add chicken and cook for a few minutes.

I brown mine nicely.

Add garlic with your press.

Add green peppers and onions.


Salt and pepper too.

I chopped the veggies in a big rustic cut.

After the a few minutes add the corn and the salsa. Cook until chicken is cooked through

and veggies are crisp tender.

Our mini vacation and a yummy breakfast treat made in my Grandma's vintage pie plate!

Well, we made it back from our little trip on Monday afternoon. We had a great time and ended up catching our limit of walleye two days in a row! Everyone caught fish and we had a fantastic time. Two evenings of our trip we spent with some good old college friends and their children and had the most wonderful time. It is so nice to spend time with old friends---people that knew you wayyyyyy back then!!
With school going full force I think it is nice to cook our children a nice hot breakfast before they head off to school. This recipe for

ZESTY BRUNCH CASSEROLE

is quick and easy and can be made the night before
and stored in the refrigerator.

You will need the following items:

Pie plate

hashbrowns or pie crust

1 cup shredded cheese of your choice( I used low fat colby jack)

4 slices bacon, crisply cooked and crumbled

1/4 cup chopped onions

3 eggs, beaten

1/2 cup milk

3/4 salsa

salt and cracked pepper

I used hashbrowns in which I browned lightly in a pan before placing them in the pie plate. You can also use a pie crust and then this would be called a quiche! The hashbrowns are a little healthier though so that is what I used. Sprinkle cheese, bacon and onions onto hashbrowns. Set aside.


Whisk eggs, milk, salsa, salt and pepper together. Pour over hashbrowns. Bake at 375 degrees for 45 minutes. Let stand 10 minutes before slicing. Now sit down with your family and eat breakfast together before you send them off to school! I think it is so nice to spend those few minutes together and they get a healthy start to the day!Did you notice the pie plate??This is one of the pie plates that I got from my Grandma--who passed away September 9, 1994. I love using this pie plate and can't even imagine how many pies she made it this plate. Both my Grandma's were born on farms and married farmers. They enjoyed making their house a home and loved cooking big, from scratch meals and loved inviting people over to share these meals. My other Grandma is my only grandparent left and is a young 96 years old!
