It's Friday, we are done harvesting our wheat and another award!!

I know my posting has been so minimal lately but things have been soooo busy around here lately. I have been so behind on reading all of my favorite blogs. I will try to get caught up so please know that I have not forgotten about you all...I just have run out of time!!! Our little chicks have started school and that is an adjustment for me to get used to them being gone all day again. I don't like it!!!! Luckily I still have one little chick still with me in the nest all day!

We finally finished harvesting our wheat!! This is the earliest that we have been done with wheat in years!!!! Normally on Labor Day weekend we are still combining and don't really get the weekend off!!!!

Because we are done harvesting, for now, anyway we get to pack up the kids and head to the lake for three days of tubing, fishing and just relaxing! I am excited as it is going to be a great way to end the summer!!! I love being in the sun and I need to soak up as many rays as I can and store up for the long winter!!!

I have received another award!!! I received it a few days ago but I just didn't have the time to get it posted!!! Coloradolady presented me with the

Busy Tuesday, Buffalo Chicken Wraps & a 100th Post Giveaway!!

Good morning~
Well we are off to a running start again! Hopefully we will have a good day and finish harvesting our wheat! Then we will have a break until it is time to harvest flax and then sunflowers!!! I have a lot of work to do in the garden so I better get this post complete! This recipe for

BUFFALO CHICKEN WRAPS

is so simple and really tasty too!

all you need:

1 pound chicken breast tenderloins or just chicken breast-chopped

onions

garlic

salt and pepper

wheat tortillas

lettuce

tomatoes (yummy ones from my garden!)

Frank's Hot sauce

Parkey butter spray

Bleu Cheese Dressing

or Ranch Dressing

Brown the chicken in one tablespoon olive oil...add chopped onions and minced arlic. Sprinkle salt and grind some pepper over the chicken mixture.

When juices run clear remove chicken from heat.

While the chicken is cooking pour about 1/2 cup hot sauce and 1 teaspoon

Parkey Butter Spray in a small bowl and mix. Set aside.

Warm tortillas so they are easy to work with. Place desired amount of chicken mixture down the center of tortilla. Drizzle the hot sauce mixture over the meat. Add lettuce and tomatoes. Now you can either drizzle your desired dressing over the lettuce or you can roll up the wrap and dip in your favorite dressing. It's your choice!!! That's it! Wrap them all up and enjoy!!!

Yummy heart healthy soup and an award!!

In honor of the fact that we FINALLY finished up with our BARLEY harvest (we still have wheat, flax and sunflowers to go) I decided to cook up a big, old pot of heart healthy

CHICKEN BARLEY CHILI.

Not only is barley a great source of fiber it

is also low fat with no saturated fat or cholesterol!!

1-14.5 oz Diced tomatoes

16 oz. Salsa

2 cups fat free chicken broth

1 cup quick cooking Barley

3 cups of water

1 tablespoon chili powder

1 teaspoon cumin

1-15 oz. can northern beans

3 cups chicken breast diced

In a soup kettle combine the first 7 ingredients. Over high

heat bring to a boil, cover and reduce heat to low. Simmer

20 minutes, stirring occassionally. Add beans and

chicken, increase heat to high until the chili

comes to a boil. Simmer for another few minutes

until the barley is tender. If desired, top with low fat

cheese and or sour cream. It tastes great just as is!! Chicken Barley Chili

Sunflowers, Pay it forward goodies & Linda's Fall Is Almost Here Giveaway & Canadian Country Girl's Giveaway!!!

It's another sunny day here on the farm and to most people that means enjoying the outdoors. Here it means it's great harvesting weather! Awhile back I posted some pictures of our crops and promised to post a picture of our sunflowers when they were in bloom. Well, the time is now! Here are a few pictures of one of our sunflower fields. Sunflowers are another one of those crops that I like to call a "happy crop"! You can't help but smile when you look out into your fields of sunflowers. When I drink my morning coffee on the deck I can see one field of sunflowers peeking back at me.

It is a very lovely way to start the day!!

The other day I was coming home from the field late at night and I stopped to get the mail! Boy was I excited when I saw my package that Rondell sent me for the Pay it forward game! I could not wait to get into the house to open it! See all my cute goodies she sent me?!? I love them! Thanks Rondell, for letting me play Pay it forward and for sending me such wonderful goodies!!! SUNSET at the lake......

Good evening everyone-

I wanted to share this picture with you....

I took it one night when our family was

at the lake. Isn't it just gorgeous?

We had a very special time watching

the sunset over the lake....just us and

the nocturnal creatures lurking about...

no phones, no television, no computer..

It was beautiful....need I say more?

LET'S PAY IT FORWARD!

Farmchick's Chickaritos......what's that???

What's a CHICKARITOS you ask....

Well, it's basically an eggroll with a mexican twist! I love them and like my eggrolls I posted a few months back....it's made the HEALTHY way!!! Let's get started!!!!

3 cups finely chopped cooked chicken
1-1/2 cups (6 ounces) shredded sharp cheddar cheese or whatever you have!
1 can (4 ounces) chopped green chilies
1/2 cup finely chopped green onions
1/2 cup corn

3/4 cup salsa
1 teaspoon pressed garlic
1/4 teaspoon pepper
1/4 teaspoon ground cumin
1/4 teaspoon paprika

you can also add black beans but I didn't have any
egg roll wrappers
Guacamole
Salsa

Shred or chop chicken......

Directions: In a large bowl, combine the chicken, chilies, onions, cheese and seasonings.

Put approx. 2 tablespoons filling in middle and roll it up!

Bake at 400° until golden brown or browned to your liking.

Serve warm with salsa and guacamole..

my favorite place....

In the early morning....when my world is quiet this is where I love to sit and drink my coffee. I love to listen to the birds calling out early morning greetings. It is a sound I long to hear in the dead of winter and every spring I eagerly await the sounds of the first birds singing in our yard. I can hear the relaxing splashing of water in my pond below. The sweet smell of the fresh country air is nothing that could ever be replicated. Oh and yes...I should share with you that my coffee is especially good because it is always made by my dear farmer. Every morning he makes our first pot of coffee and always brings me a cup. Now isn't that sweet!?!

This is my favorite seat but many mornings it is taken by our kitty cat, Mischief! He seems to enjoy sitting there also!

Happiness is........

Good morning....I know my posting is getting rather few and far between but things have been busy here on the farm. I just wanted to do a quick post. I hope all is well with everyone and you are enjoying these last days before school starts. I don't want my baby chicks to go to school....I like them in the nest with me! SO, now on to something that makes our family VERY happy.......something we look forward to every summer...something that took forever because of our cold spring..... Can you guess what it is??????
