Father's Day Dessert!

Hello everyone,

I wanted to get this on earlier but I ran out of time before my company came for Father's Day dinner! We had a nice day here on the farm! We had this very tasty dessert today BROWNIE LAYER DESSERT--it would be great for any special occassion or even for a not so special occassion!

This is what you will need:

Ingredients:

Brownie Layer -First layer
1 cup butter, softened
2 cups sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup baking cocoa
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup chopped walnuts

FILLLING:

second layer
2 packages (one 8 ounces, one 3 ounces) cream cheese, softened
2 cups confectioners' sugar
2 cups whipped topping

third layer
2 cups cold milk
1 package (3.9 ounces) instant chocolate pudding mix

Fourth layer

Whipped topping and chopped nuts or shaved or grated chocolate

Directions: In a large mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add vanilla. Combine the flour, cocoa, salt and baking powder; add to creamed mixture just until moistened. Stir in nuts. Transfer to a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool completely on a wire rack.

In a small mixing bowl, beat cream cheese and confectioners' sugar until smooth. Fold in whipped topping; spread over brownies.

In a bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Spread over filling. Refrigerate for 1 hour or until serving.

Spread more whipped topping after refrigerating for one hour--sprinkle chopped nuts or grated chocolate on top! MMMM--MMMM good!

Hi everyone. I bet those of you that check my blog wondered if I fell off the face of the earth! Nope! I am still here. Our youngest was sick last week and I just didn't do any blogging. He is better and I am happy now! We have been getting some much needed rain and our crops are growing splendidly! Because it is a rather dreary and cold day I decided to make a big pot of chili and some cornbread for supper. This COUNTRY CORNBREAD is my favorite! It is much better than the boxed kind and just as simple. What you need:

1/2 cup cornmeal
1-1/2 cups flour
2/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
3 tablespoons melted butter
1 tablespoon honey
2 eggs, beaten
1-1/4 cups milk

Combine cornmeal, flour, sugar, baking powder and salt in medium bowl.

Add oil, butter, honey, eggs and milk. Stir until blended.

Grease an 11x7 in glass baking dish. Pour in batter and bake at 425 degrees until golden brown.

Enjoy! You can eat it plain or spread some of your favorite butter on it!

Egg Rolls--the healthy way!!

How many of you love egg rolls but hate the fact that they are usually cooked in oil? I know that is my problem with the eggroll! Well, did you know that you can bake eggrolls? Today I am going to show you how to make your own much healthier version of egg rolls! To make these egg rolls you will need the following ingredients.

chicken breast(cooked and diced)

1 bag angel hair coleslaw (green cabbage)

2 carrots (shredded)

1 large onion (finely diced)

1 clove garlic - pressed in garlic press or finely chopped

salt and cracked pepper to taste

egg roll wrappers

First off, I boiled my chicken breasts until almost done. Then I diced it and browned it in a pan.

In the meantime I diced my onion. (I would have shredded carrots but I didn't have any !) In another frying pan add about 2 tablespoons of olive oil and heat slightly. Add the coleslaw, onion, garlic and carrot. Cook until crisp tender. Salt and pepper to taste.

Combine chicken with veggie mix.

Place an eggroll wrapper on a cutting board or plate. Put about 1/4 filling on the egg roll. Fold the corner over filling, then fold up both sides moisten the edges of the last flap and roll over flap to seal! Now repeat! Easy!

Place the egg rolls on a pan sprayed with Pam and then lightly spray the egg rolls with Pam. Bake in oven at about 400 degrees until browned to your liking.
