A very busy Wednesday

Hi everyone,

I realize that I am getting slower and slower at posting as things pick up here with spring field work and kids activities! Sorry about that! Today, I made STICKY CHICKEN an easy slow-cooker recipe--not only is it easy, it is portable if you need to take it out to the field! Always a plus for the busy farmwife!!!!

4 teaspoons salt
2 teaspoons paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon white pepper
1/2 teaspoon garlic powder
1/2 teaspoon pepper
3-4 pounds drumsticks, skin removed
1 onion, chopped

Mix the first 8 ingredients together: rub mixture all over chicken. Place chicken in a Ziplock back and refrigerate overnight. The next morning, sprinkle onion on the bottom of the crockpot; place chicken on top. Heat on low setting for 8 hours. (note: depending on your crockpot- by the end of the 8 hours there should not be a lot of liquid hence the name Sticky Chicken! If your slow-cooker is not real hot there will be too much liquid so you will want to turn it up to get the desired stickiness! :)

Man-Fillin' Mostaccioli Italiano!!



Say that fast three times! :) Hi everyone! Hope you are all doing well. Today I am posting a very FILLING meal. A small serving goes a LONG way. Just right for hard -working, hungry men (and women too!) This is another one of those dishes that travel well - so you can take it out to your farmer in the field - and it is great reheated too! This dish is a combination of two different dishes - I took things out and added things in to my liking. This is what I came up with........


MOSTACCIOLI ITALIANO

1 pound Mostaccioli- cooked per directions
1 pound extra lean ground beef -- browned
1 small onion -- browned in with the beef
2 - 26 oz. jars pasta sauce
1 - 14.5 oz. can diced tomatoes
1/2 teaspoon salt
1/2 teaspoon cracked pepper
1 cup fat-free cottage cheese
1 1/2 cups mozzarella cheese
1/4 cup grated parmesan cheese
In a large bowl, combine pasta, meat, onions, sauce, tomatoes,
cottage cheese, 1 cup mozzarella cheese. Mix well. Spoon into
a greased 13x9 baking dish. cover. Bake 45 minutes at 350 degrees
or until hot and bubbly. Uncover; top with remaining mozzarella
cheese and parmesan cheese. Bake 10 minutes longer.
Take out of the oven and you have a hearty pasta dish. Goes great
with a nice green salad and a dish of fruit! Everyone will love
this dish so give it a try tonight!

Time to make meatballs!


These Saucy Meatballs are great if you are going to be gone all day or in and out of the house! You can prepare them in the morning and throw them in the crockpot! When supper time rolls around they are ready to serve! The ingredients that you will need are as follows:


1 cup milk
3/4 cup quick-cooking oats
3 tablespoons finely chopped onion
3/4 of a package of Lipton onion soup mix
1/2 teaspoon ground pepper
1-1/2 pounds extra lean ground beef
1 cup ketchup
1/2 cup water
3 tablespoons cider vinegar
2 tablespoons sugar
1/2 teaspoon smoke salt

In a bowl, combine the first four ingredients. Crumble beef over the mixture and mix well. Shape into 1-in. balls. I like to put my meatballs in the oven to brown just a bit but you certainly do not have to. Place in a 5-qt. slow cooker. In a bowl, combine the ketchup, water, vinegar and sugar; mix well. Pour over meatballs. Cover and cook on low for 6-8 hours or until the meat is no longer pink.

SOUPER Saturday! :0

Hello everyone,

Sorry it took me so long to get back on here and post again but things have been CRAZY busy around here.

Ranch-Hand Soup
Here is your list of ingredients.
2 pounds extra lean ground beef--browned
1 15 oz. cans ranch-syle beans
1 15 oz. can red beans
1 15 oz. can kidney beans
2 14 1/2 oz. diced tomatoes
1 small can diced mild chiles
1 1/2 tablespoons dry ranch dressing
1 clove pressed garlic or chopped
1 teaspoon cracked pepper
1-1/4 oz. package taco seasoning
1 - 1/2 cup waters
May garnish with tortilla chips, shredded cheese and sour cream.

Brown beef, onions and garlic. After complete add the rest of the ingredients except for the garnish of course! Bring to a boil; reduce heat and simmer for one hour. Spoon into bowls and garnish with tortilla chips, cheese and sour cream.

A Farmchick Favorite

FIRECRACKER CASSEROLE 


 
This
casserole
is a family
favorite in Farmchick's kitchen.
 
Not only that, it is also very
quick and easy to make. As we
begin our long days of
field work and spring planting
I try to make things that
go together quickly and
that can be reheated
and still taste great.
 
Just put all the ingredients
together and pop it in the oven!
 
What do I need to make
FIRECRACKER CASSEROLE?
 
Ingredients:
2 pounds ground beef (extra lean)
1 medium onion, chopped
1 can refried beans
1 to 2 tablespoons chili powder
2 to 3 teaspoons ground cumin
1/2 teaspoon salt
4 flour tortillas (6 inches) Cut into bite size pieces
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 cup (4 ounces) shredded cheddar cheese
black olives (optional)
 
Directions: In a skillet, cook the beef and onion until the meat is no longer pink; drain.
Add beans, chili powder, cumin and salt.
Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.

Cut tortillas and arrange tortillas over the top.

Combine soup and tomatoes; spoon over the tortillas.

Sprinkle with cheese and olives.

Bake, uncovered, at 350° for 25-30 minutes or until heated through.

This dish is easily transported
to the field so that your
hungry farmers can
have an enjoyable supper.
 
As we begin spring
planting I pray for
some moisture here
as it is very dry.
I would rather have
rain but will gladly
take snow!!!!

Fun FOODS for KIDS Friday! Spicey Down Home Fries


Today I have an extreme craving for

SPICEY DOWN HOME FRIES
I don't own a deep fat fryer. I
prefer to make oven fries
which are MUCH, MuCh,
healthier!!!!!!!!!!!!!!!!!!!!!!!!!!
I have many versions that
I will show you over time.
What do I need to make
these zippy fries??????
2 tablespoons onion soup mix
2 tablespoons chili powder
1/2 teaspoon kosher salt
1/2 teaspoon cracker pepper
8 large baking potatoes
Pam
In a large ziplock bag, combine all the spices.
Cut each potato into eight wedges.

Place the potatoes in the bag- shake to coat.



Arrange potatoes on baking pan sprayed with Pam.

Lightly spray the wedges with Pam.
Bake, uncovered, at 425 degrees for 20 minutes.
Turn and bake 15-20 minutes or until crisp.
You can adjust the spices if you like it mild or HOT!
You can eat them plain or serve
with your favorite dipping sauce.
Ranch dressing is popular with
children and will help to cool
down the spice!!!!!!!!!!!!

Chicken Burgers anyone??

Hello! Today I am going to show you something a little different.

Chicken Burgers

Many stores carry the chicken already ground.

I like to buy a bag of frozen chicken breasts

and grind my own. I like them lean!

If you don't have a meat grinder....

that's okay. Just buy yours in the store!

So, what do you need for the burgers?

Ground chicken about 2 pounds

1 envelope onion soup mix

several grinds of pepper

one small onion, chopped

1 cup of fresh bread crumbs

The bread crumbs help keep the meat together.

Now, all you do is mix all those ingredients together

and shape your patties. Either grill them or

fry them in a pan sprayed with Pam! I chose

to fry mine on this particular occassion!


Okay, so my patty is not evenly shaped! Oh well, I

was in too much of a hurry I guess!

Now, you can eat these just like you would

a hamburger with ketchup, mustard, pickles

tomato and lettuce OR you can try something

a little different. Put coleslaw on top of your

patty! It is very tastey that way! I like to use

hard rolls for this burger. If you decide to

Farm Photo

Good morning everyone,
So, today I am going to post a picture that I think is very cute! Farmchick's
kitchen isn't ALWAYS about food! In this kitchen many things go on. Homework, visiting, farmbooks, meetings and the list goes on and on. As we all know, the kitchen is the heart of the home and if is for SURE the heart of the home in this house. So, mooooooooooooooving on here is the picture I wanted to show you.

Grilling season.....all year long!


Okay, I confess. I LOVE grilling. I grill in the winter time even though I live in a state that
that is known for it's very cold, WAYYYYYYYYYYYYY below zero
temps. I just open the door, step out, check the grill and get back
in house in a hurry! Yes, I have been know to do this when it has
been -60 below windchill!
Today, I am going to share with you one of my favorite
grilling recipes.
RED-HOT PORK CHOPS
What you need to make these awesome chops:
1/2 c. orange juice
3 T. brown sugar, packed
1 T. lemon-garlic seasoning
1/4 t. cayenne pepper
1/2 t. red pepper flakes
1 T. canola oil
4 boneless porkchops
Combine the first six ingredients in a plastic ziplock bag.
add pork chops. Refrigerate for AT LEAST 30 minutes
or up to 12 hours. Remove meat from marinade;
discard the marinade. Grill for 7-9 minutes on
each side or until cooked through.
Simply delish..I love the spice!!

Banana -Sour Cream Muffins

Good morning everyone! I hope this day finds
everyone doing well! Thank you to all that
stop by. I love comments so please leave me
a comment when you stop by and tell me

you would like to share with me. If you
have a blog then I can stop by and visit
you sometime!


BANANA-SOUR CREAM MUFFINS
I like to make these muffins when
my farmer is in the field. They are
great for a hungry farmer who has
been in the field all day!

Time to gather ingredients
2/3 c butter
1-1/3 c sugar
2 eggs
1-1/2 c. mashed banana
2-1/4 c. all-purpose flour
1 t. baking powder
1 t. baking soda
1/2 t. salt
1/2 c. sour cream
1 c. chopped nuts
or chocolate chips
or both!!!!!!
Cream butter and sugar together;
add eggs and bananas, beat until smooth.
In a separate bowl, sift flour, baking
powder, baking soda and salt
together. Add dry mixture alternately
with sour cream to banana mix, blend well.
Fold in nuts or chips and pour into a
greased HUNGRY FARMER sized
muffins tins and bake at 350 until
brown and baked through. You can
of course, use smaller muffin tins
or a loaf pan. Whatever you like!
Now pour everyone a cup of coffee
or a glass of milk and hand out
muffins for everyone! Enjoy!
PS..For those of you on Weight Watchers...
Cut the large size muffins in 1/4's
and only eat 1/4 of it! ;-))
