Well, it's that time of year when people are wondering.....
what shall I do with
these apples?
I thought today I would post a recipe of
something that I really enjoy.
BAKED APPLE PECAN
Sound yummy??? It is!!!!!!!!!!!!
The roasted flavor of
the pecans is
absolutely delish!!!
4 large good baking apples
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 cup chopped pecans
1/4 cup dried cranberries (Craisins)
1 Tbsp butter
3/4 cup boiling water
Preheat oven to 375°F. Wash apples. Remove cores to
1/2 inch of the bottom of the apples.
Use a spoon to dig out the seeds. Make the holes
about 3/4-inch to an inch wide.
In a small bowl, combine the sugar, cinnamon,
with this mixture. Top with a dot of butter
(1/4 of the Tbsp).
until tender, but not mushy. Remove from the oven and
baste the apples several times with the pan jucies.
Meanwhile, I also like to roast a few pecans
in a baking dish. After they have roasted for
about 45 mins. I take them out and add
cinnamon, brown sugar and craisins. I then
place this mixture around the apple on
a plate when I serve it!!!
Now some people must serve warm with vanilla ice cream on
the side and I will admit it's very good that way...but I also love
it on it's own. Try it both ways...... either way I think you will love it!!
Well, today is my 100th post!! I can't believe I have
made it this long!! I am gettting together a little
something for a giveaway...BUT I don't have
it quite ready at the time. I guess you will have to

Congratulations! I alway enjoy visiting your blog and writing down all of your yummy recipes :) The apple dessert looks so yummy! I will have to try this---since my 3 year old is using my apples as basketballs and throwing them in the lamp shade....good grief. lol
ReplyDeleteThis looks yummy! I looooove pecans...unfortunately, our youngest has a severe allergy to tree nuts. I don't cook with them much, even when baking goodies for other people, because I'm concerned about cross-contamination in my kitchen. I'm wondering if some sort of crunchy granola-type topping would work instead of the nuts? He can eat peanuts (they are legumes, of course) but I'm not sure they would be a good substitution for pecans in this case.
